  • In this How To Episode, we fry up some Pikeminnow! Recently, while fishing for Cutthroat near our North Idaho homestead, we started hooking into small Pikeminnow, also known locally as Squaw Fish. Pikeminnow are a predatory fish that decimate the local cutthroat population. Most fisherman will just throw them up on the bank, but i had a better idea: why not come up with a yummy way to eat them! I like to call them "Squaw Fries." They were in an instant HIT! This recipe will also work with any small fish you can pick up at local grocery store or fish market.
    Idaho has no regulations on Pikeminnow, and states like Oregon and Washington actually have bounties on Pikeminnow that will pay anglers for each fish! Be sure to check your local fishing seasons and regulations.

    RECIPE/INSTRUCTIONS:
    -Clean your fish and marinate for at least an hour in the fridge
    -Marinade: Fresh Lemon Juice, White Wine, Minced Garlic, salt and pepper
    -Mix together Flour, Cornstarch, and your favorite seasonings (I used garlic powder, Johnny's All-Purpose Seasonings, Paprica, onion powder and Old Bay
    -Heat Avocado oil (or Tallow) in a large pan to around 350 degrees.
    -Ad and egg into your fish marinade and mix together (ad the fish back in)
    -Coat fish with your Flour Mixture and fry until golden brown
    Serve with Garlic Aoli for dipping!
    Garlic Aoli:
    ¾ cup mayonnaise
    3 cloves garlic, minced
    Pinch of Old Bay or Paprica
    2 ½ tablespoons lemon juice
    salt/pepper
    Diced Cilantro or some of your favorite garden herbs. I also love Sage in this. (optional)
