Trees, for some bizarre reason known only to the developers, reduce fertility. Since fertile areas are a different shade of green compared to non-fertile areas, planting a tree in a fertile zone will change the colour around it, because the fertile colouring diminishes, revealing the underlying non-fertile colouring. Depending on the colour settings for the map, this can make it appear less - or more - green.
