There is heaps of butter but it's cut into small cubes and is supposed to be very cold...the dough is supposed to be cold when rolling out and cutting too and so the cookies do not spread at all in the oven
From my experience melted butter actually makes the cookies softer and chewier because since it’s in a liquid form when it’s melted there is more moisture being added to the dough. However you might want to add a little less butter when it’s melted vs when it’s solid bc too much butter in cookie dough makes it spread too quickly and makes a flat and crisp.
