We cook the bitter leaves in soup or Spicy sour broth with a few slices of dried anchovies,sliced onions. The sour for the broth comes from tamarind paste mixed with water.. That is the base of the soup. Like one handful of tamarind and five glasses of water. Then one handful of dried chillies boil for five mins. Rinsed and blend until pureed. Add into the tamarind water. Also can add slices of salted fish fillet into the broth.add the bitter leaves. Simmer. And eat. The stems stir fry as always...or anyway that we cook for the day.
