Aunt Duddie Makes Seedless Blackberry Jam

  • UPDATE... A few people through the years have asked me why I don't use my berry strainer for the KitchenAid stand mixer. My answer is simple - KitchenAid does not recommend running blackberries through the strainer because the seeds are so hard they will potentially break the strainer. I like using the Mouli and it's just as fast as the berry strainer with less clean-up.
    Excuse my sore throat but this is my favorite jam!
    I use the recipe that comes with the Sure Jell premium fruit pectin insert which is what Grandma Addie told me to use. The only change I make is to run the berries through a fine mouli strainer food mill to get rid of the hideous seeds. I love to mix a teaspoon of blackberry jam into home-made yogurt. It's so easy to make! If you like blackberries you'll love this jam!

    I blend the berries then boil them- strain the hot liquid and it is really quick

    My area gets tons of wild blackberries. When I was a kid I used to love to eat them fresh off the vine - seeds and all - but now as an adult I HATE those damn seeds, so I almost never eat a raw blackberry off the vine anymore. Which got me thinking about how nice some homemade blackberry jelly would be (i.e. SEEDLESS), which in turn brought me to your video. Thank you so much for the tutorial!

    My Dorothy would agree that blackberry jam is the best. She wouldn't even care if there were seeds in it. We have wild blackberry plants galore. But, sadly, these last several years they've all succumbed to one disease or another. They start out great then, just when we start anticipating that fruit, they abort and dry up. I'm going to try to cultivate some of them once my new garden is in place.

      Thanks, Terry. I hope you can grow blackberries that prove productive. Our wild blackberries get hacked down by the landscapers. Nothing much to pick any longer but the soil they grow in makes me uncomfortable to cook and can them. All that smelt works stuff. in our soil. The berries we get at the market are from eastern Washington where they don't have contaminated soil so I don't make Hubby pick them from wild bushes any longer.

    Blackberry (rubus ursinus) *is* native to Washington. The invasive species with big seeds and gigantic, thorny canes are the Himalayans. My husband and I just got back from picking 3 gallons of Himalayans and I'm watching your channel to figure out how to preserve seedless blackberry puree.

    So glad I found your video!! Thank you! I have a food Mill and will definitely use this method for my first BlackBerry jam. You mentioned Washington....I'm in SW Washington (Vancouver), grew up in Bellingham. Where are you?

      Hi Cathy! We had a couple of soft strawberry sets from the liquid pectin and I decided to go back to Sure-Jell because we never had a fail with it. Last batch of strawberry was more sauce than jam! Doing ok. Hows about you????

      Aunt Duddie I've started adding another 30 seconds to my boil time. If humidity is high, I've had a soft/liquid set and had to reboil for 1 min anyway. No failures now. As for me, I 'm finally on the mend now and I'm gonna be ok. Dealing with colon cancer the last several months, but now cancer free and getting some strength back. Was told in the beginning, "curable"! Soo thankful and soo blessed. I'm pleased you're back to filming some more of your cooking! Enjoyed all the videos! Keep up the good work.

      Hi Cathy ;). I am so happy to hear you are on the mend! I hope you continue to improve and don't try to be a superwoman and push too fast. Here in Duddieville we don't really get high humidity. I think the rain keeps the air clean and the humidity down plus we don't have a lot of heat (except for this summer) so I tend to blame the strawberry soft sets on the liquid pectin. But I will try the extra minute next time I do strawberries. All of the other jams set just fine with Sure Jell so I'm hoping the next batch will set just right.

      Thank you Jean. I love to share. I still don't know if the moringa is doing anything positive for me. I stopped taking it 2 weeks ago and didn't notice any difference. Why did I stop? I was sick and had an upset tummy. I'll start it back up in another week. I'll admit I have so many areas and things that are painful so I might need more. Just need to talk to the doc first.

    I never add any water, I do remove the seeds, but it always turns out like syrup. We love blackberry syrup.

    No black raspberry, that's a bummer. You should try it. Hahaha it just occurred to me that I have never made grape jelly. That's funny that I've never made grape after thousands of other canning.

      Usually grape jelly is the first jelly I'd teach someone to make. I gave a big jar of it to my niece who is an excellent cook and prolific canner. She ran out of her home-made jam and put my grape on the table. Her daughter put a blob on her toast and pushed it back and forth while it did it's jelly moves. "Mom, I thought Aunt Duddie could cook better than that". Thanks for the memory.

    I dont like seeds either seeds are not good for us.

      I don't like them and they are indigestible. Hungry Hubby has already eaten 1 1/2 jars of the jam and said he's decided he likes it as much as strawberry jam. That's quite a compliment because he can really put away some strawberry jam.

    How many cups of blackberry juice did you use??

      I didn't measure it, I weighed it. and it was whole blackberries, that I cooked down so they were soupy, then strained in my food mill to remove the seeds.

      It's jam. Jelly would be made with only the juice of the berry. Nice to see you again, you precious little troll.

      It IS jam. It's jam if you leave in the pulp. It's only jelly if you make it JUICE and then make the juice into jelly. Go to the jelly isle in your store, and look. You will see many jars labeled "Seedless Jam". Namely, all the berries.
