Rajasthani food is heavy on the wheat so not ideal for me as I can't eat gluten. However, I've thoroughly enjoyed watching this episode and learning more about Rajasthani cuisine.

@@acharyaguy thank you for your kind words. Yes, the biggest hurdle for me is I'm white, but once people try the food they understand that I know what I'm doing. But its taken 20 years to get here, and I'll never learn everything for Indian cuisine is too vast to learn in just one lifetime.

The bati u ate is called Bafla actually. The wheat dough is first boiled in water and then fried in ghee. The authentic bati is baked in ash and then immersed in the ghee Both the versions are treat to eat. Both the

LMB has a hotel as well. It has been there for a pretty long time, since early 1950s. They had introduced stuff like veg cutlets and Bengali sweets in Jaipur. The owners have been proponents of vegetarianism as well. Ghewar is a seasonal speciality but it is available all the year around in LMB. Its sweets are of high quality but a little on the expensive side. Dal bati and churma used to be food for during battles. Its variations were developed later. It is also offered to Gods, called Sawa Mani. It means that a measure equivalent to 50 kg of atta is used to make bati and churma. It is offered to Hanuman ji or Sri Krishna and then distributed among devotees. The best dal bati churma is made in a temple called Kholey ke Hanumanji, but you can eat the stuff only if someone who has offered Sawa Mani invites you.
Mangodi is known as badi in Bengal .....it is damn flavourful This reminds me of my Kota days ......we used to take bikes and ride to Jaipur and eat in this restaurant
Aniruddha sir, being a Bengali settled in Rajasthan since three generations, I can tell you, mangori and bori is same in principle, but quite different in taste and flavour

Las Maas is signature meat dish of Rajput cuisine which you should try. Did you miss out on Missi Roti today ?I saw it waiting to be consumed till you concluded the episode.😂😂

Food Lovers TV Sure Sir! Will wait eagerly. I visited LMB last December. I tried many things over there over a period of 3 days. However, I did not enjoy their rabdi paneer ghevar. It’s lacked the real Rajasthani touch!

Bati is made with "mota atta" it is grounded a bit coarse. I've lived with Marwari neighbors for two decades and they never put semolina in the Bati. The outer shell becomes nice and crispy irrespective of the addition of semolina. the analogy of fine atta is incorrect.

Two things: 1) The selfie style Camera work is pathetic to watch. Where's your wonderful camera team ? 2) Daal-baati is the most disgusting dry preparation which can only originate from arid deserts in Rajasthan, How can a deccan plateau person ever swallow this dry tasteless dung with ghee and jagerry ?
Hi Amit, Daal Baati is new to me too and may be a bit of an acquired taste, but is deliciously comforting when tasted with the churmas. I enjoyed tasting both versions here, the plain and the masala. The focus here is not on the camerawork, which may get better with time, but rather on capturing interesting interactions and experiences I encounter in a raw, almost unedited style. I believe these recordings offer a unique insider, first hand perspective that many of our viewers will enjoy.

2) Daal-baati is the most disgusting dry preparation which can only originate from arid deserts in Rajasthan, How can a deccan plateau person ever swallow this dry tasteless dung with ghee and jagerry ?

Daal Baati is new to me too and may be a bit of an acquired taste, but is deliciously comforting when tasted with the churmas. I enjoyed tasting both versions here, the plain and the masala.
