You should try the dim sum style first, then move on to the deep fried. It’s harder to eat deep fried because you’ll need to know what to actually eat first. Deep fried is mostly batter, crunchy skin and ligaments and harder to discern and a lot goes to waste. When doing the dim sum style, you’ll be able to eat most of it and spit out the bones. My softball buddies who never had it, tried deep fried and basically wasted most of the good eating parts. 😂
What I’m really curious about is how South Koreans eat beef intestines from your perspective. No pressure. My grandma taught me how to eat chicken feet, braised, and the collagen factor is good for you.

I usually boil to soften and expand the feet first, then air fry/deep fry after. Or just boil and add your sauces after for dim sum style.

My maternal grandmother would cook them, (as many as her country folks did) and suck the meat (really, the skin, as there's hardly any meat) off the bones. I tried it and found it gelatinous and gross. That's not meat you were showing, Ben, it's skin. It's tougher than carcass skin, because they're standing and walking on their feet!
