    I have one of cook books my gran used to use at Christmas and I cherish it so.
    Every single year I open one random page and cook whatever recipe I land on. Tonight I'm watching this special because I miss gran who passed 10 years ago and this brings me comfort. She always loved Delia's Christmas specials. I'm definitely going to try the scallop recipe from part one.

    Beautifully done Christmas foodie video!! Delia's voice and recipes are so comforting and effortless. I'm thinking her husband was the photographer as there is such compatibility in blending, the garden, the kitchen, the wildlife together and with subtle focusing on all elements inside and outside the home that make it so welcoming. Another plus is the "barely-there" background audio that harmonizes, but does not distract. WELL DONE.

    I remember mum having your cookbooks in her kitchen . And making a recipe from one of those books . It was a recipe called ‘Squidgy Chocolate Cake’ . It was delicious . I now have those books in my collection and it is comforting to know mum used these books on a regular basis and I can now do the same

      Brigjilda Gera, hi! Well, we only make turkey 🦃 on thanksgiving day. We stuffed it with “mofongo” is a green plantain fried then we mashed it with garlic and chicharrón ( crispy pork skin) it tastes awesome! On Christmas we usually make roasted pork, we Latin people use a lot of seasoning in our food, not like her that put a little of pepper, no, we use paprika, garlic, salt, pepper, oregano, cumin, i mean a lot of seasoning 😂. Then we eat with rice, chunky potato salad, ham with pineapple 🍍 sauce and cinnamon, cheesecake, custard. Well, we love to eat 😂

    I made her bread sauce recipe this winter and it's incredible! I had it with cold cuts of chicken and gammon (and it's even great in cold meat sandwiches with a bit of stuffing!)

    I like in particular how you roast the turkey in a lose foil tunnel. It keeps the meat moist by cooking in its own steam. It's brillant!

    Hi Delia, I have been watching you on TV for years, I remember your programme used to be on at 4pm on Saturday afternoon and rushing home from shopping to get home in time to watch it. I was 1st in the class at Home Economics at school and have always had a huge interest in cooking and learned so much from your programmes. I now live in New Zealand, I came here 30 years ago with my first husband, and I hate it. They have no idea how to really celebrate Christmas even though it gets hot in December which does make a difference, in our house, however, we still have a proper Christmas lunch. I would love to go back to England, unfortunately as well as being married to a Kiwi, I am in a wheelchair due to a hospital misadventure 6 years ago. I'm so glad I accidentally found these Christmas episodes on RUclips. Thanks for all your books and videos (most I have bought) carry on with the good work. You're number 1 fan, Anne

      She's a true British Institution. The mother of all home cooks. Fantastic recipes. Also famous for getting pissed at a football game for a team she owns (Norwich) and having a rant at halftime on the pitch about the crowd not making enough noise! It's brilliant - you should RUclips it!

    **UK Cooking Shows Are The BEST** Ii love watching Christmas cooking shows all year round... is that weird? Agree! @Bei Fior - I want to spend Christmas in UK too one day. I've gone so far as to google 'where is there likely snow at Christmas in UK' - I think that would take me north - perhaps along the Scottish border? My Uk friends, where would my destination be? I've seen many Christmas shows around London and never see snow (unlike in the Christmas Carol movie - speaking of which - only the version with Alistair Sim will do!)
    PS - I think I will try making your famous Bread Sauce - is it a staple on every UK Christmas table? Would love to hear from you!!!

    I make my cranberry relish minus the cooking. I quarter an entire orange, a bag of fresh cranberries, a cup of sugar, and a cup of pecans, and pulse it in the food processor, keeping it chunky. It's fresh and amazing!

    Hello Delia omg first time I've spoken to you and I've been a fan for 40 years hello...
    My name is Dell from London UK thank you for sharing your Christmas meal I wish I was coming lol however I'm going to crisis to spend Christmas with the homeless I went last year and it was amazing I was shocked and surprised... starts from 23rd December till the 29th December ...its buy grenfell tower ...sadly grenfell residents dont go anymore they lost in the fire ... ☹

    One thing I would disagree about with the Divine Delia is the stuffing of the body cavity of the turkey with a great glob of Sage and Onion stuffing. It will prevent the hot air circulating adequately, and the centre of the turkey may not be cooked well enough to kill bacteria. Just pop half an onion and a couple of sage leaves into the cavity.

    The problem isn’t with the cooking... it’s with how to time every dish to be served fresh and hot all together with out let say the meat getting dry or so. And for me I like to finish and shower and dress an hour before serving.. that’s why you need a team and family must have low expectations hehe

      Turkey can be tented in foil and put under a towel and left to rest for an hour without getting cold. Make everything you can in advance. Everything can be just Luke warm as long as the gravy and potatoes are piping hot.
      I recommend Nigella Lawson's Christmas book. It has a time table and a very relaxed vibe to it. It has saved my sanity more than once and I've never had a single recipe go wrong.

    Good old Delia - none of this nonsense about not stuffing the turkey cavity. So many 'chefs' tell you not to and say it should be in a dish separately It's called *stuffing!*

    Hello. Totally enjoyed the videos. My goal is to prepare an amazing turkey. I'm a bit confused about the timing of your cooking method.
    220 degrees for how long?
    What constitutes a "blast of heat" (for 40 mins)
    170 degrees for how long?

    Until I began to live in the Tropics, Cumberland Sauce was a great standby, though I had never heard of it being served cold - cold plates and cold sauces are anathema as far as I'm concerned, unless one is talking of mayonnaise or gribiche - and I never put lemon or ginger powder in mine. It's excellent as a finishing sauce, completely lifting pork chops out of the ordinary. I've even used it with roast pheasant.

      zimnaya thanks for your interesting comments. I know what you mean about cold sauces. Despite my reservations I have served Cumberland sauce at room temperature and it really is wonderful. I am sure it is just as wonderful warm so I’ll try that next time. Happy cooking and merry Christmas!

      Why do women insist on wearing rings and bangles when they are cooking? It is so unhygienic and it makes me cringe! It distracts from the videos.
