The only more valid setup than yours would be to orientate the reed assembly in a vertical plane to more closely emulate the playing position in the instrument itself. I can imagine someone may innovate your foot-operated bellows with an old treadle action sewing machine.
Indeed, that is a very slight tradeoff in the interests of ease of working on the reeds. But if I wonder if gravity is having an effect, I can always turn the block upside down from those orientation to check.
