Overall DELICIOUS! I've never made anything like this before. I didn't have rhubarb so I used 1.5 cups of strawberries. I also subbed in .25 c of oat flour. It was SO good! Next time, I'm going to add lemon zest and ginger to the strawberry mixture. Note of caution, I had a slightly smaller cast-iron (6" dia, 1" depth) and it bubbled over the sides onto my oven, and I had to take it out at 20 minutes. I'll put a baking sheet on the rack below next time, and leave it in for the full 25. Thanks for this awesome base recipe, seems it will work well with a variety of fruits :)

We don't have such fruits here in Tahiti. The weather is too hot and warm. Otherwise they are sold at a really expensive price. I have never seen rhubarb in real life though. Instead we have delicious mangoes, pineapple, bananas... but still craving strawberries, raspberries, peaches, kakis... 😭
Tiffany Nguyen I think so. As far as I know, a crumble could be just butter, flour and sugar (?) but the almonds are probably for crunch + flavour. I don't think they're essential, though.
I think she might be unfamiliar with rhubarb - I have never heard anyone describe it as 'mildly sweet' and not even mention its tartness, which is usually the main taste you get from it, so she's probably very new to using it. But yes, you remove the stringy parts first. ^_^
I don't peel it either, but I cut into it with a sharp knife on one end and then pull the stringy parts out of the whole stalk, so they don't end up in the finished product. I don't think you have to do that, IMO it just improves the texture. ^_^ Oh, when you use it often, do you have a favourite way of preparing it, you could recommend? I'm always looking for new ideas - rhubarb isn't among the most popular fruits and there is a distinct lack of receipes... ^_~
I learned you can never reheat a crumble :( I made a huge strawberry and rhubarb crumble for church the night before & in the morning I tried to warm it up & it just for super mushy.

I cook with rhubarb all the time, I never peel it.
