Cooking Mexican Cornbread Casserole! (Soft Spoken) Mixing, frying & measuring~Yummy dinner~ASMR

  • This is my second attempt at this Casserole. This first one was not filmed because I just wasn't sure of anything. My husband said that he didn't like how sweet it was. So here is my second attempt with an adapted recipe according to me. No sugar. I really love how it turned out! However, if you attempt this recipe as I wrote it, please keep in mind that it needs more moisture in the meat mixture. Maybe a little tomato sauce? Maybe more cheese? Definitely do not use anything but real cheese, shredded from fresh blocks of cheddar or Monterey Jack. The pre-shredded does not work in this casserole. It has preservatives in it that suck out the much needed moisture and does not melt well. One more thing....sour cream topping is an absolute must. Once I went out and bought some, the rest of the casserole was soooooo good. Remember that this is ASMR and I am not trying to teach y'all how to cook. The recipe is a basic formula that needs to be played with. And it's all over the internet. Find your favorite.

      Oh that makes me so happy, Emma! This recipe is a bit more complicated but it was worth a try. So many things I would do differently. But I love Mexican food!

    is your voice in this video a voiceover or realtime voice? what I mean to ask is that is the voice recorded after the video was filmed or whilst it was being filmed? also, when your publishing the same video but one with your voice and the other without it then how is the one without the voice completely without the voice? (if the voice is being recorded in real-time) i mean how do you remove the voice for non talking videos versions?
    (English isn't my first language so I hope I was able to make you understand my point 😅)

      I record the original video without any voice. Then I take the video into my studio and do a voiceover. 😉❤️

      Oh, you mean the utensil holder made of cheese graters? Lol. Got that from Cracker Barrel. That's been about five years ago or more. Bet you could still find it somewhere though.

    Oooh, I just finished watching! That looks so good! 😋 Maybe instead of tomato sauce, you can try replacing the cut up tomatoes with canned diced tomatoes. I like the petite diced tomatoes 😊 That might give it the moisture your looking for. I definitely want to try this recipe! ♥️

      Very little of the food in the United States that is called "Mexican" is truly authentic Mexican food. 😂 just because I use a bag of taco seasoning doesn't make it Mexican, right? Lol. I am so sure that I would love to have some of that tortilla soup. 😘

      If you try the recipe, add moisture in there somewhere! It was just a bit drier than it should have been. But so yummy!

    I've made Mexican Cornbread Casserole for years. I changed mine up by using Rotel in place of the green chilis and tomatoes. No special reason other than the ease of it and the Rotel adds a little more flavor. I too use onion flakes instead of powder. I use Jiffy Cornbread mix and the sweetness of it tastes great! I serve with sour cream and sliced avocado.

    Since my mobility has been drastically reduced lately, I thought it time to catch up on some of your videos. A food video too! Makes me very happy. This recipe is actually something I will consider trying. I love just about any version of Mexican food. My wife wouldn't be able to have this because she can't have too much corn. But I would definitely make a good lunch out of this or something. So, when I'm able to get across the house without almost passing out... I'll try this. As usual, prayers for you and yours.

      Hey CJ! 🙋🏻‍♀️ so happy to see you here again! I wish it wasn't under the circumstances of you being tired.
      Just remember that this recipe turned out a little bit dry the way I did it. Find a way to add some moisture to either the meat mix or the cornbread itself. There are all kinds of ways to do it. Some people mix the meat in with the cornbread and cook it like that. I tried it that way once and it was pretty good. But I used sweet cornbread and it was really weird. So that's why I tried it this way and it was too dry. Sort of a catch 22. I gotta try it one more time and I'm sure I can get it right. But I won't do it in a video. 😂

      @RebeccasBeautifulASMRAddiction When we're faced with similar, here in the South, we look for something with oil or fat to moisten the cornbread some more. We can use fat, like bacon grease, for example.

      Yes! Ro-tel tomatoes would work great. I wanted fresh tomatoes, but they just want juicy enough. Definitely gonna try this again and add moisture everywhere I can.

    I think do I prefer sweet just slightly more, but it really depends on the context and what else it's being eaten with. My mom and I make versions of this- we call ours taco bake (because I overall do not like casseroles (I don't like my food touching, for the most part, and casseroles are the king of food touching), so if I like it, I just can't call it a casserole). Mine's taco seasoned ground beef, kidney beans, black beans, black olives, corn, spread cornbread of choice (sweet or savory) on top. If I'm feeling fancy and I have some, I put mini tamales in the bottom, then the rest. My mom's version doesn't have kidney or black beans, but always tamales. Sometimes we mix some corn into the cornbread, too. Adding a tablespoon or two of water to the meat before layering the rest also helps keep it moist, as does sealing it all in good with the cornbread layer.

    If I didn't know you've moved to Susanville, I'd never realize this is not your Portland kitchen really! Amazing how you could preserve the same look with the same comfy feeling!
    I also loved how you displayed the recipe on a white paper with green on the left and red on the right, thus forming the Mexican flag! Wonderful touch !
    I've just got back from the hospital, my dad's had a stroke again, he's been in there since Friday morning, so you can't imagine how good this video did to me right now! I so much needed this to calm my nerves! Thank you, honey, for everything you do! For an entire hour you've succeeded in making me totally forget about my problems. I love you!!

      That is just the cutest thing! It's time to change my intro to spring! I love that. 😂
      This year I decided to start them when spring officially begins and I will continue the spring intro all the way up until summer officially starts in mid June. Don't ask me why. Maybe it's because I live in Susanville now and spring doesn't really come as early as it did in Tennessee. Anyway, my spring intro will start on the 19th of March. The week begins with a trip to Walmart looking for Easter stuff. Yay! Don't worry, I haven't forgotten spring!
      I want to say that I would not recommend getting a tortoise hair cat like I have. They are not a very affectionate cat. She loves the lap, but does not like to be picked up or moved around much. She's really curious, and all into my business. That's adorable but she's a little bit loud. I love her to pieces, but she was definitely an intrusion in my household. She drove away one of my cats. My Billie kitty left home and never returned because she just didn't like the constant aggressiveness that came from my tortie. That was sad. 😔
      But Xtra is loyal, and I love her to pieces.

    Yum! Im going to make this. I looked up the recipe online. I noticed the recipe was just like yours but added a jar of salsa to the meat mixture. Id probably sprinkle cheese and jalapeño on top of the cornbread for mine. Great video! ❤

    This is so strange because we just made this exact recipe we found on the Internet with two boxes of Jiffy cornbread mix, etc. We found it to be dry like stuffing but with a good flavor. We probably won’t make it again and we cook a lot. So I just found it odd that you found a similar recipe, but you probably made it, your own, which is what we might try to do next time without the cornbread😅🙌 always love your soft-spoken videos, just as much as your note speaking😎💐

      Mine was dry too! This was the second time I tried this recipe. So many variations can be done with this. If I do it again, I will do it differently again. Add tomato sauce to meat mix. I think I am on to something. 😂

      Yes, it was the least expensive refrigerator we could find. We are on a budget. But I was so pleasantly surprised by the amount of space it had in it. It was actually more roomy than my side-by-side in my old house. 😀👍🏻

      : ) of course! It gets horribly humid here during the summer, often reaching above 90%. The problem is that the area is kind of a valley, so everything north of us constantly funnels towards the Atlantic. Its more seen with snowstorms, but if a storm is large enough it can lull over us, and continue to gain power from the Atlantic and it'll just continue to dump on us. It was a bit shocking when I moved around the country and realized people won't endure the same storm for multiple days.
      Do you bring it up due to humidity in your area, or simple curiousity?

      I think I have always idealized Connecticut and that area as being so romantic and beautiful. I drove through once. But now having spent 14 years in Tennessee, it was just a matter of curiosity because I can't stand humidity. I am now moved back to California just recently. so relieved to have virtually no humidity. No weather pattern stays for long in the north of the state where I'm at. When I saw that you live in a forested area I imagine pine trees. That's where I live in California. Unfortunately, the dryness does cause fire hazard so I'm just outside of the trees for safety.
