    To those who are saying he’s a bit too much sterilizing his lemon by scrubbing too much with baking soda. That process isn’t actually sterilization. Sterilization means using chemical or heat or gamma rays and other agent to kill microbes. What he is doing is probably removing pesticides and or wax. And to those who wants to try this out you can actually skip that part. Wax is almost on every fruits and vegetables. Fruits have waxes as their protective covering from microbes and pests. But some farms actually coat additional wax to their harvest to ensure longer shelf life. And those waxes are of course food grade. For the sterilization of mason jars, you can also skip that part. Microbes cannot proliferate and thrive with that high concentration of sugar and acidity (low pH). As long as you have a clean jar you’re good to go. But I recommend soaking your produce with diluted vinegar and baking soda to remove pesticide residue. Enjoy making your own tea!

      Avea Illium oh I didn’t know that. But the acidity from the juice will be enough to neutralize the bitterness of the rind.

    To people who think the cleansing part as extra or tedious...not everyone might be getting all kind of fruits or vegetables all year long..so we generally go for pickling process. That way we can get things all year round. Or may be one might not be able to use so much amount at a single time so this way can be used over a longer time without wasting anything or rottening.
    And basically for pickling you have to be careful about sterilizing your jars and proper cleansing of food products. Otherwise it may catch fungus!

    That was a very lovely process to watch, reading the comments I see many negatives on the cleanliness however, I think taking the few extra steps will lead to a much longer shelf life of the product.

    For those not understanding
    First sterilise the container in which ur gona store it, like Mason jars in this video, by boiling them in water
    Take the ginger, soak in water, keep it aside(to remove the dirt)
    Then take the lemons, dip each one by one in water then scrub off the dirt and impurities, first with salt, n then with baking soda, immerse in water, add vinegar. Keep it aside
    Wash take another container, keep the lemons one by one in that, add fresh water to give a final rinse
    Then remove lemons, thinly slice them, remove the seeds
    Chop ginger finely
    Take ur Mason jars, first layer of lemons, then middle has ginger, than top it off with lemons again, add honey 1400gm here, one by one in both Mason jars. Seal em off
    Store for 3 days at room temperature
    N it's done
    When needed
    Add boiling water to a few lemons n concentrate
    Njoi ur drink

    I just wanted to say Thank you for sharing this Recipe and please in the future don't ever delete this. I have made this last spring or summer 2020, it took me a day to finish the whole process (I'm slow, accepted). After drinking a bit, due to the weather I had stopped. Then now its almost a year and had fermented a bit when we opened the jar, the lemons became jelly like, the honey became watery but guess what I still love love love it. so Thank you for introducing this to us. I really love the effort placed on making this from scratch and everyone in my house appreciates this tea.

    If I may cut the cleaning procedure I'll go buy everything organic! Just saying😊. However I've been preparing this concoction for 8 years and I usually remove or peel the lemon skin if they're not organic. Same with ginger. At any rate thumbs up to this video for the effort of demonstrating how to be hygienic in food handling!!!

    By the look of it seems like it will be good to taste will definitely try it. But what I loved the most is they way person sterilised everything be it the jar, lemon or ginger. Amount of love and passion and preparing something can be clearly seen in this. By far the best DIY cooking video I have seen. Loved it and surely trying it this weekend 😍

    I went to eat Korean food the morning after celebrating a friend's 21st birthday and had a hangover. The waiter at the restaurant made me some tea because I was feeling so sick and this helped so much! And having a bit of salt on my rice 😅. Shh! Don't tell him I did that. He hates that!

    I make ginger honey tea all the time. I boil the ginger and fridge the ginger tea when I want a cup I warm the ginger tea squeeze some lemon into it and add a teaspoon of honey . Really good👌

    I've been doing this concoction for a month now, I like to add fresh mint from our garden, it tastes great but I personally prefer it with tea. It goes well with warm tea and some cookies in the morning 😊

    A pessoa faz o chá para durar um ano inteiro. Por isso o cuidado em esterilização dos ingredientes e das jarras com selamento. Interessante o cuidado e carinho ao fazer o chá!

    After the honey lemon ginger is done macerated and the jar is opened, how do we keep it? Do we let the jar in room temperature (just put the honey lemon jar somewhere in the kitchen) or do we put it in the refrigerator so it stays in good condition?
    If it's alright to be in room temperature without needing it to be refrigerated, how long it stays good? I plan to make this and give it for my mom so I need her to know how to keep this properly too. Thank you

      Store at room temperature for 3 days.
      After that, keep it in the refrigerator.

      I made mine 6 months ago. The rest of the 2 jars left look and taste like the first time I use them. I think they can last for years.

      birdhead73 they have to clean the lemons because they’re imported. As they’re imported, they’re exposed to several chemicals and such. Taking that extra precaution is definitely a necessity. (:

    I usually do this at home ☺️ and this one is a great tea,...
    I add some turmeric too with the infusion ☺️ Great to prevent colds and flu especially nowadays with our current situation
