You could maybe do a jalapeno mead as you need the sugar to make wine. Mead is basically wine but instead of grapes for sugar they use honey, but it is common to add fruit or spice more for flavor. Then if you like a sweet wine or mead you add sugar or honey after fermentation is done. A dry wine is just without adding sugar. They are so similar that in some places mead is just called honey wine. Of course I am not an expert and this is just the basics. You might also have to add the jalapeno after fermentation for either as they might increase the acidity too much and kill off the yeast.
