I think the problem is she didn't explain the multiples for the chain therefore, leaving the three stitches kind of confused beginners. The reason she left three stitches at the end of the chain hun is because, is because she needs multiples of two for this pattern and she can go and undo those later when she's completed her blanket. Another words she just crocheted a bunch of chains started working back into that chain and when she got the amount she needed she just stopped and turned. Those chains can be cut and undone and tightened later many people do this.

I just made a baby blanket with this stitch. I chained 120 which for me was 40”. I stopped at 30”. I used Pound of Love yarn which is a 4 Worsted weight. I used a J hook size that got me the size I wanted. I do not chain 3 but chain 2 at the beginning of the rows because for me it fives a more straight edge. I hope this helps you.

This video would be much easier to follow if there were either verbal or written instructions along with the visual. I had to keep rewinding and rewatching. Also I’m not sure why there are 3 stitches left at the end of row 1?

Typically, if it is for a baby blanket you use baby yarn, it needs to be light like that

Leaving extra chain at the end is common amongst crocheter. You chain without counting to your desired length trim when you finish.
