I'm not sure how you normally do your latte or if you know about this, but one tip I have, from a former Starbucks barista, is that if you don't want your coffee as bitter, once your espresso is done, you want your milk to be done too so you can put a tiny splash of milk into it. This will "save your shot" so that your shot doesn't die and become super bitter. When the shot gets really dark, that's when you know it's dead, it take about 10 seconds for it to die! Love you guys!!
