I love the jar covers. I just wanted to suggest using shirring cotton for them. You just put it on your bobbin and sew. Very quick and easy amd probably cheaper than buying elastic if you didn’t have any. Just make sure to tie the ends of the shirring elastic together after sewing the circle.
I was blessed enough to be gifted more local apples. I have a 5 and a 4 gallon bucket of vinegar working. And I'm excited to be trying my first kombucha 😊
I always pick up old sheets and duvet covers when I find them at garage sales or at a good price from the second hand stores. At my favorite second hand store a duvet cover which is double fabric I pay approximately $3.00 a single sheet is about $1.50. Some times, if I've found 2 identical single duvet covers/sheets I will sew them together so that they fit my king size duvet. Much cheaper than buying new... Yep, I'm cheap!! But, I also use the 100% cotton after I have washed it in the HOT double cycle in the washing machine for many things. I've made everything from bandages, Cut 5 inch strips full length of the sheet, sewn the edges, ironed them and rolled them so that if/when I'll need a bandage that isn't elastic, I have quite a few ready to go. Those things are really expensive to buy!! I've also made slings, scarfs, squares that I can use to filter out whatever I am cooking that needs straining. And much more. I have a very large box of cotton material/sheets as well as towels when I've been able to find good ones of various size, just waiting for whatever I need to make.
I just harvested 450 lbs of potatoes this weekend. My daughter, niece and sister are coming over this week for a “canning party”. Lol. My sister and niece have never canned but want to learn.
Heidi, we like the canned potatoes fried in the air fryer, in scalloped potatoes, or potato soup. My friend fries her canned potatoes in the skillet. Thank you for the dehydrating ideas.

I dehydrated some potato chunks but a bit smaller than yours. They make great potatoes o'briens with the peppers, also dehydrated. The first time I dehydrated potato slices I sliced them too thin and when fried, they were totally crispy. Now I slice them thicker and works so much better. My favorite for pressure canned potatoes is potato soup, so good.
I just reuse old elastic, rubber bands don't like me much, they sooner or later tear, mostly sooner😁 Lazy me will just put them over top, no sewing on! I cut off the elastic from the hubby's worn underpants and they are great to tightly hold fabric over 5 gal rainwater buckets to keep mosquitos out.
I successfully experimented using Ascorbic Acid / fruit fresh / vitamin C. On drying some shredded potatoes. I filled the bowl about 1/2 full of water and added a tablespoon of Fruit Fresh. I shredded my potatoes directly into that water, then stirred by hand the mixture. I let them soak for a short 10 min. And placed them on my dehydrating trays for 10 hrs at 140°. They came out fantastically. Nice color and the excess potato starch remained in the bowl water. Wolfmama😮

I drain/rinse canned potato quarts, do a rough smash then toss with 2 Tbs oil and seasonings. Bake them in my 13:1 Ninja Foodie “toaster” oven on the sheet pan. It makes THE BEST “fried” potatoes for breakfast and dinners. I never knew what to do with canned potatoes. Now we cant be without them! I use that oven so much. Its awesome for 2-3 people. This Ninja Foodie countertop oven has a dehydrate setting. While I am in the kitchen I’ll pop some pinto beans in the Instant Pot then dehydrate the beans. In the morning they are already cooled. Awesome for those small batches of herbs etc. It is the bomb for fresh and frozen pizzas and even open faced sandwiches. The right tools are a game changer to make all this processing fun!! When i lived in town years ago, i grew alot of rhubarb and all senior neighbors used my rhubarb to keep regular... like a hot lemonade etc. Smash some up in water add dadh of honey for tonic
I love the idea of making a cotton cloth for the dehydrator trays, thank you for sharing that. Yesterday I dehydrated the last of our Italian plums and have them conditioning in canning jars today but have a paper towel under the ring instead of a flat so that they can breath. I really need to make myself some cute jar covers for that job. The idea to powder the rhubarb is great too and now I have a purpose for those stray bags of it in my freezer. If I love using it I'll have to barter for some next year...I took out all my rhubarb plants this year to make an asparagus bed. We really aren't rhubarb eaters and I used to make jam and pies for my parents who have now passed.

Yes! I have always disliked the texture of it cooked but like the flavor of it in things enough to put up with it but powdering makes it so much better!
I'll have to make my own because the fruit flies (to me) are quite fierce and I had to throw a batch away because they were able to get in due to the elastic not being super tight.
I have an entire set of pink Pyrex mixing bowls, serving and baking dishes. Pink is not my color, but these were a gift from my Dad, so they are special to me because of that. I tend to like more earthy colors. Loved the tips on how to dehydrate the potatoes! Mine tend to brown too much, so I’m trying your method today. Hopefully my dehydrator cooperates. I just put 3 more quarts in my pantry and am now up to 15 total. I still have a lot of potatoes and am at the point of trying to decide if I should do more or just go ahead and pray for the best when storing them as is. Total sidenote I have been wanting to share with you: I have gone back to cutting out unclean meats after the LORD showed me a few things quite clearly. The first one just simply enough about being "set apart". One thing that truly sets us a part as believers is cutting out those things so loved by the world.

Regardless, what does it hurt for me to abstains from that which the LORD called unclean? Most of those meats are not healthy meats anyway or are more subject to disease or contamination (think Red Tide). So again, what or who does it hurt for me just to practice more healthy form of eating? Also to note, the abstaining from meats would seem to apply to all meats, as we are seeing going through both the vegan movement and the elites that want us to eat bugs.

I even upgraded my peach from quart to gallon(I had more peach cores 🤣) i am really into dehydrating since last Christmas when i got one. I think I need to start dehydrating a lot of things due to the fact that here in Australia we don't have a Cellar that we can use to keep our fermented items cool and our house gets rather hot in summer. Not sure if you may have suggestions on this challenge. My fridge is full already with so many different things so placing it in the fridge is out of the question lol.
I’ve used those mesh vegetable/drawstring bags to stuff full of sliced cabbage, lettuce, apples, plantains, celery …. If it’s no to sticky or liquid- I’ve bagged em’. every couple hours I go in and give them a toss. I lowered the temp just to where it comes on the last bit-- I think it helps with the conditioning…Been working great- learned lots from you - I don’t go above 115- Also - don’t know why but I spritz everything with a GSE mix of 10 drops in water- just gives me a safe feeling! I would have thought putting a cloth or a silicone tray on the dehydrator trays would keep the air from flowing through the dehydrator, making it harder to dehydrate. Does it just take a bit longer?
Silicone is necessary for some things as you, of course, cannot dehydrate liquids on mesh rack. Since I have only dehydrated liquids on trays like that, I would not know if it takes longer but a thin cotton cloth actually seems to speed up the process a bit but for certain does not slow it down. Natural fibers are key here both for health and for air flow
Butter is really nothing but fat with some milk solids so no, I have not. it would simply melt. I believe butter powder is made through a process called spray drying, which is yet another form of dehydrating but also some of the fat is removed in that process. I watched a couple videos the other day on how to dry can potatoes… I grew more potatoes this year than I would be able to eat in one year so I’m going to try this method of canning…Hers browned up really nice for french fries or potatoes O’Brien and she said the mashed potatoes are far superior to potatoes that are canned in liquid… her channel is “grow and preserve”…
I noticed on the Ball brand mason jar box that the seal is good for 18 months. I have my rice and pasta ready to vacuum. Will I have to reseal these in 18 months. Thanks for advice to this beginner….

Hi Heidi I was wondering if arnica would bring down the swelling of a wasp sting since I really don’t wanna have to resort to steroids? I was stung on the tip of my thumb Saturday night since my puppy was trying to play with it and I thought it was a piece of cardboard since he got into a box and the wasp stung me right on the tip of my thumb and it literally felt like I got electrocuted.
It might but I have found plantain leaf to be excellent for wasp stings. I just pick a leaf, chew it up, and apply directly and in a couple of minutes it is gone
Why do the dehydrated potatoes etc need to be sealed. Dies that refer to sealing in a canner, or just a lid with a tight hand seal? I am new at dehydrating.
While several dried foods need to be vacuum sealed (anything with fat in it, meats, mushrooms, et cetera) not everything does. I vacuum seal everything to preserve the quality when going into the long term storage sections but the jars I am working through and keep in my kitchen, I do not vacuum seal unitless it is those things that may go rancid or stale if not vacuum sealed. Mushrooms are one of the worst for going stale if not vacuum sealed
QUESTION: You mentioned berries. I have been trying to find elderberries in my area with no luck, fresh or dried. So I was looking at ordering some dried berries. That's when things got a bit confusing when I found there are black elderberries, blue elderberries, and a variety of other elderberries so I jumped right down the research rabbit hole. That has not been helpful in nutritional information. I just want to can some syrup for immune support because the government has made their path ahead pretty clear. So which elderberry, black or blue, would be my best choice since they are the most available? TIA
All of them are good but the one most commonly used for their benefits are the sambucus nigra which is a black elderberry. There is another black elderberry that I cannot remember the name of but it is also highly used. The black ones simply have more antioxidants in them because of their color
I've been looking for old sheets at thrift stores, but none have a label with fabric content. Is there a way to recognize 100% cotton without a label? I did find what I thought was a white sheet in the 'pet' section of the thrift store (59 cents instead of $3.59), but they always roll things up & tape them, so when I got home and unrolled/untaped it turned out I had a white tablecloth with a white pattern stitched (embroidered?) into it - any chance that would be 100% cotton?
One way to tell is to take a small piece and carefully burn the edges with a lighter over the sink. If the edges melt, it has synthetic fibers but if they burn more like paper, it is cotton
I have to say I’m hating the taste of pressure canned stuff. I waited for weeks to get my new digital canner from the states and then another two lying at Customs in UK and I hate the taste of chicken, soups and vegetables. I dehydrated my chilli last year straight from my stove and it was wonderful , just like fresh when rehydrated. I think the pressure canner is going to be just for beans so not a total waste and I suppose the stuff I’ve already done would be welcome in a dire emergency but so far I’m really wishing I hadn’t bought it and the enormous expensive step down transformer I had to purchase with it🤦♀️
Yup, tastes are different, no doubt! Sorry you went trough the expense. When I moved to the US I needed to get a transformer which we inverted so I could run all my electric appliances I had brought along. I got a second one, because the thing is so darn heavy to move from one place to another. After time all things died😎 I still have an iron and a kitchen mixer, after 40 years. No need for 2 converters. My son in law used the second one though.
Wonder how you are canning your chicken. Ugly chicken is fantastic. Raw packed chicken in a jar, nothing added. 70 minutes for pints, 90 minutes for quarts.
That is really going to be up to you. I find that they all dry up great no matter how thick but obviously the thicker ones will take longer. For the slices, if you go too thin, they turn more into a potato chip, which is good just to much as is but can fall apart too easily when cooked up

@@cynthiafisher9907 yep, I know those scriptures and this is something I have been studying for years. Context matters and yes, I am going by HIS word, not man's. Regardless, what does it hurt for me to abstains from that which the LORD called unclean? Most of those meats are not healthy meats anyway or are more subject to disease or contamination (think Red Tide). So again, what or who does it hurt for me just to practice more healthy form of eating? Also to note, the abstaining from meats would seem to apply to all meats, as we are seeing going through both the vegan movement and the elites that want us to eat bugs.

Hedi, you can use red sumac for lemon flavor also. You have to pick while sour, before allot of rain, or they'll lose the flavor.

Hey Heidi! I recently watched your vinegars video and I've started a blueberry and peach and both are coming along. I even upgraded my peach from quart to gallon(I had more peach cores 🤣) i am really into dehydrating since last Christmas when i got one. I was wondering about dehydrating potatoes because i buy the hungry jack ones and we love those so this video is right on time. I'm going to stock up and jar us up varieties of potatoes🥳🥳
Heidi, thank you for another awesome video. I think I need to start dehydrating a lot of things due to the fact that here in Australia we don't have a Cellar that we can use to keep our fermented items cool and our house gets rather hot in summer. Not sure if you may have suggestions on this challenge. My fridge is full already with so many different things so placing it in the fridge is out of the question lol.
I’ve used those mesh vegetable/drawstring bags to stuff full of sliced cabbage, lettuce, apples, plantains, celery …. If it’s no to sticky or liquid- I’ve bagged em’. every couple hours I go in and give them a toss. I lowered the temp just to where it comes on the last bit-- I think it helps with the conditioning…Been working great- learned lots from you - I don’t go above 115- Also - don’t know why but I spritz everything with a GSE mix of 10 drops in water- just gives me a safe feeling! I try to use oxygen absorbers at any time I can. It might not be necessary but it makes me feel safe when I vacuum seal.😊

I would have thought putting a cloth or a silicone tray on the dehydrator trays would keep the air from flowing through the dehydrator, making it harder to dehydrate. Does it just take a bit longer?
Silicone is necessary for some things as you, of course, cannot dehydrate liquids on mesh rack. Since I have only dehydrated liquids on trays like that, I would not know if it takes longer but a thin cotton cloth actually seems to speed up the process a bit but for certain does not slow it down. Natural fibers are key here both for health and for air flow

Yes. I actually dehydrate up a lot of meat in various types and forms

Butter is really nothing but fat with some milk solids so no, I have not. it would simply melt. I believe butter powder is made through a process called spray drying, which is yet another form of dehydrating but also some of the fat is removed in that process. I watched a couple videos the other day on how to dry can potatoes… I grew more potatoes this year than I would be able to eat in one year so I’m going to try this method of canning…Hers browned up really nice for french fries or potatoes O’Brien and she said the mashed potatoes are far superior to potatoes that are canned in liquid… her channel is “grow and preserve”…
Yep, heard of it. For me though it is also about saving space and the dried potatoes do help do that.
I noticed on the Ball brand mason jar box that the seal is good for 18 months. I have my rice and pasta ready to vacuum. Will I have to reseal these in 18 months. Thanks for advice to this beginner….

Hi Heidi I was wondering if arnica would bring down the swelling of a wasp sting since I really don’t wanna have to resort to steroids? I was stung on the tip of my thumb Saturday night since my puppy was trying to play with it and I thought it was a piece of cardboard since he got into a box and the wasp stung me right on the tip of my thumb and it literally felt like I got electrocuted.
It might but I have found plantain leaf to be excellent for wasp stings. I just pick a leaf, chew it up, and apply directly and in a couple of minutes it is gone

Why do the dehydrated potatoes etc need to be sealed. Dies that refer to sealing in a canner, or just a lid with a tight hand seal? I am new at dehydrating.
While several dried foods need to be vacuum sealed (anything with fat in it, meats, mushrooms, et cetera) not everything does. I vacuum seal everything to preserve the quality when going into the long term storage sections but the jars I am working through and keep in my kitchen, I do not vacuum seal unitless it is those things that may go rancid or stale if not vacuum sealed. Mushrooms are one of the worst for going stale if not vacuum sealed

QUESTION: You mentioned berries. I have been trying to find elderberries in my area with no luck, fresh or dried. So I was looking at ordering some dried berries. That's when things got a bit confusing when I found there are black elderberries, blue elderberries, and a variety of other elderberries so I jumped right down the research rabbit hole. That has not been helpful in nutritional information. I just want to can some syrup for immune support because the government has made their path ahead pretty clear. So which elderberry, black or blue, would be my best choice since they are the most available? TIA
All of them are good but the one most commonly used for their benefits are the sambucus nigra which is a black elderberry. There is another black elderberry that I cannot remember the name of but it is also highly used. The black ones simply have more antioxidants in them because of their color

That is more likely to happen with you lay it on the trays pretty thick but it also could be they need more time

I've been looking for old sheets at thrift stores, but none have a label with fabric content. Is there a way to recognize 100% cotton without a label? I did find what I thought was a white sheet in the 'pet' section of the thrift store (59 cents instead of $3.59), but they always roll things up & tape them, so when I got home and unrolled/untaped it turned out I had a white tablecloth with a white pattern stitched (embroidered?) into it - any chance that would be 100% cotton?
One way to tell is to take a small piece and carefully burn the edges with a lighter over the sink. If the edges melt, it has synthetic fibers but if they burn more like paper, it is cotton
I have to say I’m hating the taste of pressure canned stuff. I waited for weeks to get my new digital canner from the states and then another two lying at Customs in UK and I hate the taste of chicken, soups and vegetables. I dehydrated my chilli last year straight from my stove and it was wonderful , just like fresh when rehydrated. I think the pressure canner is going to be just for beans so not a total waste and I suppose the stuff I’ve already done would be welcome in a dire emergency but so far I’m really wishing I hadn’t bought it and the enormous expensive step down transformer I had to purchase with it🤦♀️
Yup, tastes are different, no doubt! Sorry you went trough the expense. When I moved to the US I needed to get a transformer which we inverted so I could run all my electric appliances I had brought along. I got a second one, because the thing is so darn heavy to move from one place to another. After time all things died😎 I still have an iron and a kitchen mixer, after 40 years. No need for 2 converters. My son in law used the second one though.
Wonder how you are canning your chicken. Ugly chicken is fantastic. Raw packed chicken in a jar, nothing added. 70 minutes for pints, 90 minutes for quarts.
I have an American Canner. No electricity needed. Do you buy canned goods because homemade canned food is far Superior. Sorry you don't like it.

That is really going to be up to you. I find that they all dry up great no matter how thick but obviously the thicker ones will take longer. For the slices, if you go too thin, they turn more into a potato chip, which is good just to much as is but can fall apart too easily when cooked up

My mom would make a rhubarb syrup and can it. She would use it added to water to make a drink similar to lemonade. It was very delicious.
