Bo-Katan's problem wasn't that she didn't believe in the warrior tenets of Mandalore, it was that she believed _too much_ and got disillusioned.

Interesting to see you being introduced to Bo Katan in the Clone Wars after already seeing her in The Mandalorian. Also I'm not sure if you remember but Lux also dislikes the Republic because Clone Troopers killed his Separatist father.
Gonk is a power Droid. Basically a walking battery pack.
The blue Spartans are the Republic Senate Commandos. They are the Chancellor's (as well as other members of the Republic) personal, human security guards. Much like the Secret Service, but they look even more badass! Not clones whatsoever, just regular humans specially and highly trained in special escort and protective services of various high ranking Republic officials, both in service and retired. You first saw them in the episode Cloak of Darkness waay back in S1 w/ Ventress, Captain Argyus, Commander Gree, Ahsoka, Luminara, etc. As well as numerous times throughout The Clone Wars until the Red Guard replaced them and eventually the Royal Guard during the reign of the Empire. First appearance was in The Phantom Menace, as well as the other Prequel movies.
I always look forward to your Clone Wars reactions. You are one of my favorite reactors to it. Like you, I watched The Mandalorian first. Because so many reactors kept referring to The Clone Wars, I decided to finally watch it. I’m so glad I did! It’s some of the best Star Wars out there!

The Bad Batch isn't necessary for Ahsoka, but it has some really incredible animation and fight sequences. I like the story too.

Because it will be quite a while until you would watch the Ahsoka show either way I would honestly personally recommend that you watch The Bad Batch after Clone Wars. Then Rebels and then Ahsoka. This is not a must. Stuff that happens Bad Batch isn't directly linked to the Ahsoka show in the way that Clone Wars and Rebels are. But Bad Batch is the next animated show chronologically after Clone Wars and I think it would be very interesting and rewarding for you guys to watch through the shows that way. Bad Batch also has a few connections with Rebels, which could be nice to watch in this order. Again just a personal recommendation, you guys do what you want, but I do think it would be very cool.

Gonna have to Watch The Bad Batch before rebels, direct continuation of the Clone Wars
FYI the main Death Watch guy is part of house Vizsla, an ancestor of Jon Favreau's character in Mando (the giant machine gunner in blue). That's why he challenged Mando for the Darksaber, because the leader of Death Watch owned it.
Also when Bo first met Mando, she figured out he was a descendant of Death Watch culture and that's why she got so paranoid around him.

There's a reason the Empire put the Mandalorians down like animals. And it's all due to that burning village. Leave the Mandalorians alone with too much power, and they do stupid things like that.
