Spanish Potato Omelette topped with Chipotle Shrimp, Cheese and Spinach

  • Spanish Potato Omelette Ingredients:
    3.5 oz Olive Oil
    1/2 lb Yellow Potatoes (small diced)
    1/4 cup Yellow Onion (small diced)
    6 Eggs
    6-8 cups fresh spinach
    12-18 pieces of uncooked shrimp
    Shredded Sharp Cheese of Choice
    Chipotle Chili - To Taste
    Smoked Paprika - To Taste
    Ground Red Pepper - To Taste
    Garlic Powder - To Taste
    Salt - To Taste
    Pepper - To Taste
    Parsley for Garnish
    Spanish Potato Omelet Directions
    1 - Dice all veggies small
    2 - Place olive in skillet and heat on medium
    3 - Sweat Onions, Potatoes, salt, pepper and garlic powder until translucent and then turn to high and cook to golden..do not burn or cook to brown
    4 - Remove from heat and place in bowl
    5 - Add eggs, salt, pepper to bowl. Whisk eggs until frothy and add onion and potatoes until combined
    6 - Heat olive oil in 8 inch skillet
    7 - Add eggs to the skillet and turn heat to the lowest heat setting
    8 - Let egg cook until 85% done (this will take about 15-17 minutes-be patient)
    9 - Put a plate on top and flip uncooked side down on the plate
    10 - Slide back into the skillet uncooked side down and cook another 5-10 minutes
    11 - Cook until done and flip onto plate
    12 - Garnish with cheese, let melt
    13 - Cut into 6 to 8 slices
    14 - Top each slice with sautéed spinach, Air Fried Shrimp, parsley and serve
    Enjoy
    Sautéed Spinach
    Add light olive oil to skillet
    Heat on medium high
    Add in spinach, punch of salt, pepper and garlic powder
    Sauté around for 30-45 seconds
    Remove from skillet and place in bowl
    Serve on top of Potato omelette
    Air Fried Shrimp
    Wash with water and pat dry completely
    Spray with light olive oil
    Season to taste with Chipotle Chili, Salt, smoked paprika, garlic powder and red pepper
    Cool on 390 Air Crisp for 6-7 minutes
    Once cooking is complete, toss around and serve on top of Potato omelette
