  • In an episode of Hollywood actor Stanley Tucci's travelogue, 'Searching for Italy', he visits the Valtellina Valley in Lombardy and is introduced to the Bitto Storico, the oldest edible cheese in the world. But this is not that brief glimpse! In 'BITTO The Legendary Celt Cheese' the story is told from its origins 2000 years ago to the 2010s when a battle arose between a group of staunch traditionalists who wanted to save the integrity of the cheese of the Bitto Valley and those who advocated for the more industrial version of the DOP product. Described as "One of the very few meditation cheeses in the world" It’s produced in cottage industry quantities - no more than three thousand wheels per year, therefore, sold at somewhat bewildering prices.

    I went to the “Bitto Kingdom” store (37:08) and brought 2 orders of bitto cheese (aged 3 years & other aged 5 years) while in Italy last month (December) to the United States. We just cooked a delicious breakfast with it this morning. Good to see the process here. Thank you.

    Bellissimo documentario che illustra la storia incredibile per la creazione di un formaggio unico proveniente da una lunga tradizione secolare che si tramanda da generazioni. Complimenti al realizzatore di questo filmato che ha dato la possibilità di conoscere questa meraviglia a chi ancora ne fosse all'oscuro.
