Often after hearing a new tune then I want to learn to play it- this gives me fresh motivation!!
My issue is staying awake long enough to practice. I’m 2 years in and already tackling Chopin Etudes with my instructor. Balancing work, marriage, fitness and a baby is my struggle.

I think you should make a playlist of your videos. It would be very useful.
As an adult beginner who's listened to SOOO many songs over the decades, not being to replicate songs as quickly as I enjoy listening made me lose tons of motivation. What's helped me is taking the approach a young child would take as a student. Patterns more so than music.
That's a great approach! Breaking it down into patterns can really help. Keep at it, and enjoy the process!

I never really practiced once I switched to chord based playing rather than formal classical. I couldn’t stop finding stuff to play around with. Piano should always be fun…..
I'm a new piano student, and since I'm retired, I have no excuses for not touching the keyboard every day. When I was learning to play golf, the best investment was not in clubs or club membership, but lessons. I can buy the best equipment, join exclusive clubs, but I can't buy game. I'm paying for weekly piano lessons now, as well as the annual fee for Piano Marvel to fill in the blanks during the week. Between the two sources, I can see improvement every week.
Equally important is the excellent online instruction from Kaitlyn, and others. The generous free training and guidance are wonderful!

What motivates me most is knowing, what separates me from people who can NOT play piano, is just ENDURANCE. Every 12-year-old wunderkind is just so good because he/she invested much more time than me (yet 😁)

Have you tried jazz? In this vein, I once had a classical guitar student in my theory class. She knew that I taught jazz, and she. came to my office and said "I think I want to switch to jazz. I heard it's easier." BWAHAHAHAHA!!
Lack of progress is the big killer. And scales. Why do people play scales? What does it do other than ingrain the sharps and flats? Your progress on the Chopin piece is because you are an exceptional player, an outlier. Most people cannot progress like that.
With hard work and practice, you can learn piano. I am no outlier, I can promise you that.
