McDonald's fries are pre-frozen to make it authentic. It's not freshly cut and fried. I need to get a commercial potatoe 🥔 slicer. Quang, I suggest you mount the potatoe slicer vertically to a wooden stump or block.

I was doing some HVAC work on a farm north west of Red Deer, AB that produces McD's french fry potatoes. They're really only good for fries, I tried to bake one and it was like chewing sand lol. In fact, they use different types of (patented) potatoes for the fries and the hash browns.
So much cheaper and healthier to do it yourself but nothing says childhood like MCDONALD’S. Hanging out somewhere not home or school as a child is magical. All of Quang’s kid’s friends are gonna visit to eat some McQuangnald’s fries.

So after going thru the drive up window, I’m either in the parking lot or eating the fries as I drive down the road. My French Fry Cutter I got 2 weeks ago has seen a lot of action, but I’ve been using the air fryer. I do the prep work like you do. Cut, wash twice, but I use lint free towels to dry the fries. Then off to the Air Fryer. I have used the larger size cutter head, need to try the smaller Mickey D type cutter head soon. If McDonald’s Fries get old and cold, not as pleasurable. As long as you don’t let the fries in too long, the Air Fryer does a good job reheating them IMO. (If they are cold, they just don’t make it for me!)
A drill and 4 suction cups you attach to that slicer and you should have an easier time slicing those taters! Man I’d like to hang with you and the wife. Well, this isn't how they make the fries, but they still look good. Originally the fries were first boiled in an animal broth (I believe they used chicken broth) with some sugar and corn syrup then fried in beef tallow. The vegetarians and vegans complained *EYEROLL* so now they do veggie broth, sugar, syrup, and fry in trashy veggie oil.
Quang parboil your fries first man then freeze them on a flat surface then do the double frying that will keep them from going soggy so quick and you’ll get really crispy French fries
Can’t replicate McDonald’s fries at home, it’s got food acid, silicone and a lot of chemicals to stabilise it’s shape and texture. The closest thing I’ve done at home is soak the fries in water + baking soda + a bit of salt and sugar. Quang, give it a try and see what you think. Pin my comment ❤
