On how I make it, instead of soy sauce, using a mix of gochujang and gochugaru and a little salt will give a good kick to the flavor. It also looks redder and more appetizing.
I was confused why there was sauteing at the start, lol. Then i saw Pinoy style. Now that made sense. (Pls cut your kimchi in bite-sized pieces next time :) )

Actually kimchi is salty when freshly made because it hasn't fermented yet, but after 2 days and more, the kimchi will taste sour because of fermentation..I bet you haven't made kimchi..
This recipe is the simplist one I could find and it turned out delicious, you really don't need anything fancy which I love!

since it's a filipino style, soy sauce is more accessible than gochujang, i like gochujang better though for an appetizing look

Kimchi is already salty...i suggest you remove the salt and soy sauce.
kimchi is sour not salty
maybe you are using fresh kimchi. I suggest using week old or older kimchi to make it sour not salty
