Pear Ginger; Exotic Preserves; I struck Pure Gold

- I know what I'm doing with the rest of my pear harvest this year. This finishes with a transluscent golden honey color, a firm texture and luscious exotic flavor. I struck pure gold. I'll have to multiply the recipe times 5 for a full canner but, that's not a problem. I already did that and the measurements are as follows:
5 pints:
28 cups pealed cored pears
12 cups sugar
5 Tbsp. Fresh grated ginger
1 cup lime/lemon juice (both or a mixture)
I have never heard of that jelly, it looks delicious. I do put ginger into honey for sore throat’s in the winter time. I do love ginger so I will make this recipe when I get some pears. Thanks for sharing.🍐🍐🍐🍐🍐
