But later on being faced with Nurbanu, a woman as strong as her, she finally gets to know how Hafsa was feeling. How it was to have to loosen the reins and accept that a new young and brave women takes the power. That must have been such a confrontation for her. Defenitely a good mirror. Same with Nurbanu and Safiye, and Kosem and Safiye. None of them truly wanted to hand over the power.
It such a shame the show never banked in on the parallels between Hürrem and Hafsa. Nor did any of the characters acknowledged it, like you'd think as at least Sumbul would.

We, unfortunately, don't know the exact extent of what kind of relationship Nurbanu had with Hürrem since there aren't any accounts of their interactions or letters exchanged between them. The prevailing theory, however, is that Hürrem, who would've had a direct hand in selecting the women for her son's harems, could've actively selected and or trained Nurbanu. (Even then, of course, there's no way to know for sure that Hürrem specifically named Nurbanu. Newcomers to the harem were given new names automatically, but Nurbanu _is_ a unique one, so it's definitely possible that either Hürrem or Selim changed her name later.)
Her full name was Afife Nurbanu, so I think you may be right and when she came to the palace they just automatically gave her one of the common names Afife and later when she stood out from the crowd then Hurrem or Selim gave her the unique name Nurbanu.
