I've lived in Texas and now in Louisiana and this is a really nice fusion! Doesn't take too long as well if you have tortilla ready. Haven't seen the use of mayo in a traditional burrito though, sour cream is the go to to include some wetness/fat. Guac is used as a typical add on. Shredded cheese/queso as well. And maybe some salsa. Haven't seen nachos added in but seems like a good idea

As someone who grew up in Texas and who has been to India and loves the food in both places, i thought the recipe crosses both worlds very well. I'd use lime in the Pico and sour cream instead of mayo . But i'd also add the great hot sauce you get with mo-mo's as a substitute for salsa roja to complete the masterpiece. Love the recipes!
