My favorite rice dish ❤ in USVI & Puerto Rico, it is sometimes made with pitted pimento olives, but usually has Goya red sazon, bay leaf, thyme, more generous amount of tomato paste, and sofrito.

You’d definitely love Puerto Rican arroz con gandules! Gandules are pigeon peas. Arroz means rice. So much flavor in the sofrito!
