- Welcome back to Monday Measures! It's that season again, time to get cookin'. Once you have made quiche, you will wonder why you haven't made it. It is actually very easy to make and you can do so many things to make it different. Have you made it? If so, what is your favorite?

Here is the recipe...
1 ready pie crust
2 to 4 slices swiss cheese
4 eggs
3 tablespoons flour
1 1/2 cup milk, half and half or evaporated milk.
Salt and pepper to taste
1 cup baby spinach, or greens, if you use kale, sauté it.
1- 4 oz. can sliced mushrooms
1/2 to 1 cup of chopped ham, sausage or bacon
Shredded cheddar cheese, enough to cover the top
preheat oven to 350°
Allow crusts to come to room temp.
In medium bowl whisk together eggs, flour, salt, pepper and milk.
Place pie crust in pan and cover the bottom with swiss cheese.
Spread spinach over cheese, cover with mushrooms and meat.
Pour egg mixture over top try to cover all the greens.
Sprinkle shredded cheese over top.
Bake at 350°F for 45 to 50 minutes until set and golden brown. A clean knife test works.
Let set to cool and refrigerate leftovers.

Quiche is definitely easy! I’ve made it and love it! I made a tomato pie one time, now that was good!!
Tomato pie is yummy! I was thinking of putting some tomatoes on top of this one, but wanted to do it more basic. 😉😉
Back in the day, when I wasn't doing Keto I used to make "Impossible Pies" using Bisquick. Those are sort of Quiches. Now I do crustless Quiches. Also make Egg Bites in the Instant Pot.
I had lots of kids, we ate a lot of impossible pies, LOL. Good idea, I should use my Instant pot more.❤❤😉😉

Hello! People make quiche so many different ways, I am always up to try them, no matter how they are made 😋🤣 I have a special planned for this coming Monday, instead of Monday Measures. But I don't think people will be upset 😉☺

Good tip about the cheese layer on the bottom.
So good! The pieces from Costco were gouda, aged white cheddar and Jarlsberg, so any cheese will do.
I've never made quiche. I'll have to try.

I’ve been loving Quiche lately. The only difference is I use large carb smart tortillas as the crust. Winner winner! Eggs and cottage cheese is my base. Yours looks delicious!❤

Great tip! I gotta try that. I have made it like a Frittata before, no crust. It works too.
I really enjoyed this . I do make quiche because I am a veggie so it’s a tasty way to pack in the veg . I have never put flour in it though , I will try that next time xx

Looks really good. I use both spinach and lettuce a lot. One thing I have not seen you uses over time is Lettuce. Have you tried lettuce? How easy is it to get there in Fairbanks or North Pole? Is it a challenge to get?
I used to use a lot of spinach, until I found out it's not good for your kidneys and lettuce really has no nutritional value. They are very cheap and easy to get, but we spend a little more to get swiss chard and spring greens, also easy to get but cost a little more and much better for you. 😁
Hello Bears 🐻🐻🐻 Welcome back, Monday Measures !!! 😊😊 The quiche looks yummy. Of course, I would have to change up some ingredients for Hubby to eat it, but I would just as you made it. Making me hungry. Is 2% milk ok to use? That's the best I could do to make for Hubby. We eat alot of spinach but you said swiss chard is better ... never had that. Did Heather enjoy her dinner? Actually, if I can get to the grocery in the next several days, I might make it this weekend ... we are going to be stuck home. We are getting the driveway coated and sealed and we can't drive on it for 48 hours. We're on a main road so we have no where else to park. At least I won't get behind on videos. Hello! I am sure 2% milk would work, I like the milk fat myself. We have even made it with almond milk before, not as good, but it still works. Heather had a quarter last night and another quarter for lunch today. We love quiche. We learned that spinach is not good for your kidneys (oxalates), so we use swiss chard now in it's place, it actually has more oxalates but the nutrients are different, it's strange, I know, but I am really studying food. It looks delicious. I need to try this, but I don’t like Swiss cheese. What other cheeses would work well for the bottom.? I am thinking provolone, unlike cheddar I don’t think the flavor would be too strong .

Provolone would work perfect. The cheese I actually used were aged white cheddar, gouda and jarlsberg.

I don’t think I ever ate quiche. Could you leave out the flour?
The flour makes it fluffy, I have used keto non gluten flour, it works, I am out right now.
