Same here. My dad usually made pies from scratch & would make pie dough cookies. Pie dough rolled out & spread with butter, cinnamon & sugar. Then rolled back into a cylinder shape & cut into 1-2 inch width pieces. They were so yummy, especially the middle inside part of the cookie.
Sides can really stretch meat out. I once served 7 people with one roast chicken for Christmas and 4 of those were adult men. Every time my husband invited another apartment in our four family apartment building, I added a side or two. By the end, we had the whole building fed.
The Latin community calls those pies Empanadas, and they fill them with all kinds of things. They are usually the size you made yours and can be sweet or savory. My husband is from Peru and when I make them for him we fill them with ground beef, boiled eggs and a Peruvian spice. They are so yummy! Love how many veggies you have included in your meal. Often during frugal meals the one thing that gets slipped are vegetables. Your total amount spent is way under $19.75 if you consider the fact you do not use all the margarine or flour in this one meal, also you will mist likely have leftovers of some items. . By keeping that in mind, you should be extremely proud of the meal you made. Happy Holidays

I live in NYC where grocery prices are outrageous. However, I am close to an Aldi, where I frequently shop because even with rising prices Aldi tends to be more reasonable than other major chains (we do not have a Walmart), and a Dollar Tree. I have never tried to put together a Dollar Tree dinner but you have inspired me to try. You are very creative and I love watching what you come up with. Keep up the good work and Merry Christmas!

Great ideas again! So many combinations and choices, I like how you thought out of the box for the cookies and the sausage filling ideas, to make shepherd’s pie or topping for potatoes🥧
The cookies need a dusting of powdered sugar. Here’s a tip: bakers can put regular granulated sugar in a clean coffee grinder and it will pulverize the sugar into a powder without having to buy an extra ingredient. Thrifty shoppers can find good coffee grinders second-hand for cheap too since a lot of of coffee fans invest in one but are too lazy to grind their own coffee beans and then switch back to ground coffee and then will donate it back to charity shops. It’s also good for grinding whole spices too.

Merry Christmas. You can make risotto with normal rice, saute onion celery, mushrooms, add the rice, chicken broth, white wine, cook stirring constantly. add in grated parm and a stick of butter. I also add in chicken, or add broccoli, butternut squash, it reheats so well.

We do alot of shopping at a salvage grocery the stuff is near expired some of it is expired - but it’s still fine. We scored 20 lbs of Starbucks coffee beans for 20$ yes 20 lbs. it was expired but we opened it and ground a couple pounds - it smelled and tasted amazing. Storing the rest of it in the freezer till we grind it. I love your videos you help ppl stretch food dollars! One day I’d like a video of when you clean out the freezer in the back 😂 I did that recently we had a feast of one or two so many different things - Merry Christmas!
What a wonderful score! I was super lucky and able to score a 3 pound boneless half ham at Costco for $10 something for Xmas Eve dinner. Our meal isn't going to be fancy but it's going to be hearty and made with love.

For those of us who can’t handle this many carbs, I’d ditch the rice and mashed potatoes, double up on the hand pies by getting another thing of margarine for more pie dough (you had plenty of leftover filling), and add another low starch veggie. I would happily eat 3 of those meat pies! I like butter beans, and they add good protein and fiber, so I’d probably keep them. Pie, beans and 2 veggies would be a plentiful meal for me. The meat pie is the winning recipe here for me! Merry Christmas!
I was thinking the same…everything she made looked so good but personally I’d have skipped the jam dessert, and used the pie dough for more hand pies. I understand the risotto was an impulse buy (I do that kind of thing too) but for a more balanced meal I’d have swapped that for more broccoli or some carrots or green beans. Risotto, corn muffins, butter beans and mashed potatoes in the same meal is a bit much for me.
Oh how nice the spread looks when you laid it all out. It made a lot of food I'm so surprised and looks like some of the things will be left overs or you can incorporate in another meal Good job thank you
Great ideas, as always. And to answer that pondering you had: yes- imperial sticks freeze well. I'll get a couple boxes of 4 at a time and freeze them. They're all I use for 'butter' anymore. I just take a stick out at a time for normal use in my butter dish and get a couple out if I know I'll be making something that needs more.
If you love crunchy edges on your meatloaf, then making mini ones in a muffin pan or your little brownie pan would be fabulous. That's how I have to do it in my house, so there's no arguing over the end pieces. Plus, they cook in much less time. Thank you for sharing your creative meal ideas!

Yay a new video..lisa I love your videos..and our Christmas dinner came from Dollar tree and the foodbank and a grocery bargain bin ( meat) and what i already have and leftovers from thanksgiving ( canned veggies and shelf staples and spices .) and we're kinda having a Christmas hodge podge dinner..i only spent like under 30$ for a Christmas dinner with a family of 4 and a Mexican rat dog..if you have the right part for your bowl mixer or an electric ice cream maker and I think some half and half you can make your own butter its a pain but can be done lol...but you've saved me so much with your ideas and they've helped alot...btw your pocket pies are also called Cornish pasty 's .and they're great

For the saran wrap, if you can find them where you live, you just have to buy it once and then you can put whatever wrap you use in that box with the cutter until you inevitability break it, but they do last a long while. I despise cling wrap, however there are times I want it for rising dough, covering etc. Last time I splurged and got the fancy one you're talking about. It is a game changer. It actually sticks and costs about the same as all the pieces I've thrown away of the crappy brand.

Not sure if you do this on your muffin pans but I always put a bit of water in my empty muffin pan sections when I run out of batter. Kind regards from Canada.

I love those seasoned butter beans. The smoke flavor is what makes them so good to me.
I figure most people would love them, smoke flavoring is just one of the very few flavors I don’t love 😅

That’s why I buy things when I see them even if I don’t need it that day so I have it in my pantry when I need it

Yay a new video..lisa I love your videos..and our Christmas dinner came from Dollar tree and the foodbank and a grocery bargain bin ( meat) and what i already have and leftovers from thanksgiving ( canned veggies and shelf staples and spices .) and we're kinda having a Christmas hodge podge dinner..i only spent like under 30$ for a Christmas dinner with a family of 4 and a Mexican rat dog..if you have the right part for your bowl mixer or an electric ice cream maker and I think some half and half you can make your own butter its a pain but can be done lol...but you've saved me so much with your ideas and they've helped alot...btw your pocket pies are also called Cornish pasty 's .and they're great

For the saran wrap, if you can find them where you live, you just have to buy it once and then you can put whatever wrap you use in that box with the cutter until you inevitability break it, but they do last a long while. I despise cling wrap, however there are times I want it for rising dough, covering etc. Last time I splurged and got the fancy one you're talking about. It is a game changer. It actually sticks and costs about the same as all the pieces I've thrown away of the crappy brand.

Thank you for your great ideas. I was happy to see the farmers sausage again as I haven't seen them for awhile. I have one of those cling wrap dispensers that I bought at Walmart. Not sure if you do this on your muffin pans but I always put a bit of water in my empty muffin pan sections when I run out of batter. Kind
