Amy just embraces these different things and gets excited about discovering them. You can tell that she truly loves China, the food, and the people.

I was same like you, or still having this social anxiety, but there was once I tried to have a break and take a look at if anybody around really cared about what I might look like or what I was doing, and guess what, nobody cares! nobody was looking at me in the way I might have imagined! Yes, we should know that we are not that important as we ourselves might see it. People are all minding their own business, and they don't give a shit about other total strangers at all. In fact, if you ask them to take more look at us, they are gonna be like who the fuck are you😂

Wow, being close to the border with Shanxi 山西 Province the accent of Heyang sounds closer to Shanxi accent than it is to Shaanxi 陕西 accent. Reminds of the video you made in the city in Jiangxi which was closer to Hunan in cuisine style than to typical Jiangxi cuisine.

Make at home, with scissors 🧑🍳 Make a batter with strong / bread flour and water. Make pancakes in a frying pan. Cut into strips. Prepare chilli oil, chopped spring onions and coriander leaf - again with scissors. Drop noodles in boiling water for 10 seconds. Enjoy : ) One can experiment with adding salt, black pepper, egg, herbs etc to the batter. Also,, one can try rice flour - leave the batter quite a while / warm for the rice to fully dissolve. Taking it further, try thin crust pizza (add tomato paste / ketchup then cheese, onions, peppers, etc. onto the pancake then oven or grill), cannelloni, lasagne (cut pancakes to size), and dumplings : )
If you are for adventure, try a paper shredder to cut the noodles. Might work if the pancake is thin enough and not too soft. Untested idea - maybe great idea, or maybe ridiculous.

When you head back east you should make a stop along the way in Taiyuan and try their special aged vinegar. There’s a vinegar museum that’s kind of like a winery tour where you can see the aging process and sample. They even have vinegar ice cream.
The area is also known for their maaaany different types of hand pulled and razor sliced noodles, and a spicy fish head soup. There’s also this pasta dish that looks like a giant honeycomb that I can’t remember the name of.
It somehow reminds me of Fritattensuppe/Pancake soup. In Austria we use left over Pancakes/Crepes and cut them in the same slices as this noodles and put them in a hearty beef broth. But as the Pancakes are made with eggs , the consistency is fluffier, kind of spongy, than a classic noodle. I wonder if Derk knows this dish and find similarities.

It is really a different style.. Its really a pancake soup so to speak. In german speaking countries, wie have something similar we make out of german crepe/pancake. A sliced pancake can soak up the broth much better. I was really amazed to see that other countries have something like that too

我是青海的,我来列一下青海小吃吧,酿皮,梗皮,老酸奶(表面有一层黄色奶皮),狗浇尿(一种薄饼),甜醅,湟源酸辣里脊(不一定非去湟源吃,西宁也有很多不错的),羊肠面(我最爱的搭配是,一碗素面+一碗面肠肉肠混合),干拌面,炮仗面,烤羊肉串,烤羊排,炕羊排,手抓羊肉,青稞饼,牦牛肉干(超市里可以买的零食,我喜欢蓝色袋子那个牌子),青稞酒,青稞酸奶,八宝茶,蕨麻(可以用来煮粥的一种农产品),先列这么多吧,我想到再补充
如果你时间紧,不知道去哪里吃。那我简单推荐一下吧,莫家街里的马忠食府可以吃到上面我列出的大部分美食。但马忠食府这些年争议比较大。因为宣传的比较好吧可能,游客越来越多,所以东西价格一路飞涨,这是真的。也有许多本地人觉得马忠食府味道不如以前了。我作为本地人,客观地说,马忠食府价格现在真的相对偏高一些,比它味道做的好的店也确实越来越多。但我觉得它的味道还是可以秒杀绝大部分同类型店的。对于游客来讲,一次性品尝到多种地道青海美食,这里依旧是个不错的选择。

It reminds me of a thing in germany called fladle-suppe (apologies for spelling) that has pieces of what look like pancake in it.
In Austria we have Fritattensuppe. The striped pancakes are made with milk, eggs and flour served in a beef broth.

Also it's a lot healthier than the modern instant noodles which are actually fried in palm oil in order to be dehydrated (and hence full of oil). Any idea how long is the actual shelf life of this ancient version ?😱

It is really a different style.. Its really a pancake soup so to speak. In german speaking countries, wie have something similar we make out of german crepe/pancake. A sliced pancake can soak up the broth much better. I was really amazed to see that other countries have something like that too
