    Nice t-shirt Pedro! How would you compare this hot sauce to a store bought brand? Is it similar to any brands you have purchased? Also, how does it keep when stored? Looks like a big batch and even though I go through the hot sauce that may last a while. Great content as always. Take care.

      Hey bud, I bought two of those shirts...love them. The biggest difference of store bought verses homemade is it tastes so fresh like out of the garden taste! The green jalapeno one is almost like a salsa verde (green)....and the red jalapeno one tasted like a very fresh almost like restaurant style salsa flavor, very good. The first hot sauce I made was from some peppers in a pot on my back deck. I think that they were cayenne peppers. I didn't take any of the seeds out and they were dried....very hot but very tasty hot sauce. I think that was like a cross between a Franks and Tabasco flavor. Storage: I am not sure to be honest. I know that the acidity in your vinegar has a lot to do with shelf life and other health considerations, You want to have at least a 5% acidity in your vinegar. I keep my store bought hot sauce in the pantry and it has kept for a few months although it doesn't usually last that long unless I have a bunch of different kinds. i put the stuff I made in the fridge and you are right that green jalapeno batch was large. My wife and I have started weight watchers and I believe that hot sauce and salsa are free foods. We will be eating a lot more of it.       Jeremy, I ate that jalapeno hot sauce on my breakfast burrito this morning and on my dinner tonight and it is over half gone. That stuff is delicious!!! I will probably find something to put it on tomorrow. I am planning on making a red chile pepper sauce tomorrow.....after I pour the concrete for my new counter tops.
