      The purpose of using day old rice is because NEED DRY RICE FOR FRIED RICE.
      But not too dried.
      So that means, you dont always need to use leftover rice. But that's an easy way.
      You can still use fresh, soft rice. BUT you need to treat them differently. The point is, need to have dry rice.
      edit; need to have dry rice to make the flavor seep deep into the rice. also, the name says it all. fried rice. so the rice is indeed need to be some kind of fried. like.. you can taste the grain in your mouth. not mushy wet rice.

      The origin of that dish probably about how to reuse the leftover rice to make a delicious freshly made meal.
      And remember. Back then, people dont have rice cooker😅. They all cook rice either in normal pot or.. a special pot that has different names in each region. China, Japan, indonesia, Philippines, India, all call it differently.
      And after they cook the rice, they move the rice to a container thing. Made by wood or bamboo.
      Like in the famous bamboo steamer
      And obviously that container cant warm the rice. So over time, the rice will get cold and dry. It's not delicious anymore if it's dried. Hard to chew

    guys don't heat your pan up like that if you are using coated pans that will absolutely wear your coating off. also teflon release toxic fumes when heated up above 500 F which is the kind of pan used in this video

      I was looking at that pan, too! You can't heat non-stick pans up to 500 degrees. The hell with the wear on the coating (already abused with the metal utensils, anyway), the peas released into the air is not good at all. It'll kill any birds in the house, too.

    Highly recommend not heating a nonstock (that includes Hexclad) to smoking - the Teflon coating degrades and can release hydrofluoric acid into the air which is a potent and deadly poison. Ceramic pans don't release this, but the don't survive the heat either.

    I would suggest NEVER pre-heat your non-stick pan empty to the point where it smokes. The harmful coating can be damaged and cause serious health issues in the long run.

      Agree! I have been cooking for 30 years. For home cooking, personally use a ceramic cook and heat up about 1.0 oz of corn oil with a dash of sesame oil on high for about 15 second. Then put the meat and mushroom in the wok first, stir for 30 sec, then dump 2 scrambled eggs into the wok, stir with spatula in circular motion while flipping the wok for 30 seconds (still high heat) . Now the overnight rice into the wok, smash and turn, 2 tsp sauce, 1 tsp oyster sauce, half tsp chicken powder, 2 dashes sesame oil. Now, use the spatula to turn the content and flip the wok at the same time so that the rice is fried and coated with eggs and flavor. Lastly, put in the scallion and the final touch, a few dashes of white pepper on top before scooping it out to the serving bowl.

      This is a hexclad pan, basically a non-stick pan with a raised hexagonal pattern of stainless steel.
      It's fine to use a metal spoon in one because you're only scraping the stainless steel parts, though anything thin enough to go between the stainless steel parts can still scratch the non-stick coating.

      Right. And especially if you've got birds.
      While it's unhealthy for us, it's extremely poisonous for them. If you're unlucky, you've got some dead pet birds the next couple of days.

      I actually think that's not a Teflon pan - the hexagon pattern is a giveaway because I've seen a lot of other RUclipsrs advertising these pans which are non stick but a different material. Notice how he is using a metal spoon? That damages normal non-stick, but these ones are different, and they market them as being more professional level. Don't know the brand name so I could be wrong tho

    A smoking hot pan is needed to make fried rice. I wouldn't use a non-stick pan for this unless you like PTFE flavoring.

    Pro tip: Use a slotted spoon and fry all your ingredients one by one in a smoking pan then set them aside on the plate. That way, you can get wok hei on all your ingredients on even the weakest stove...

    Found this short at the perfect time. I had almost nothing in my fridge with which to make the fried rice(the tofu went bad and I didn’t realize I was out of carrots) but I did use more oil than I usually do and it was like night and day!!

    You can use fresh steamed rice too just add a bit more oil when you fry the rice. The reason you use day old rice is they are dryer while freshly steamed rice has more moisture making them clump together. The oil will make the freshly steamed rice not clump together.

    IMPORTANT! DO NOT heat a nonstick pan until its smoking, they contain PTFE which releases toxic fumes when heated up to high temps. Hexclad pans are also made from PTFE. I thought he'd know this as a pro chef tbh

      @@some_guy_2323 Us asians don't know any better as teflon was more of a western thing originally since they don't use smoking point temperatures to cook their food. So Asian me growing up in the west never knew and ended up inhaling a lot of those fumes throughout my life, not life threatening, but definitely has negatively affected my health and worsened IBS. It's not like CI woks take much maintenance esp if you stir fry regularly, and SS is by far better for pots than non stick.

    Pretty sure those non stick coatings break down and become carcinogenic after very high heats are used. Its breaks it down and it begins failing. Why most chefs use plain old stainless steel for hi heat uses

    When your oil is that hot be really careful that there is no exess water at the bottom of the bowl when adding your rice. It can vaporise and ignite the oli.

    The pan will not low it's temperature even if it's leftover rice cause that's only a rice not liquid, That's good cooking but it's much better to use leftover rice in fried rice always 💯

    "spread it out even, so all the surface area can get heat."

      @@felixiswara So, what exactly is the difference between a regular nonstick coated pan and a hexclad pan where the nonstick coating is separated by "steel hexagons peaks"? It still has the same plastic coating which comes off over time due to material expansion when heated and ends up in the food.

    I'm glad WokGod keeps emphasizing to use Fresh Steam Rice. You don't have to use day old rice, day old rice was only used because they didn't have fridge long time ago
