Personally I'd just fillet the sides off like normal, leave the scales on and grill it over charcoal with a handful of hickory and mesquite. But if I'm dinning out this looks good but yet again I'd eat the hole fish lol

Awesome grill!!! Whose project was it? I guess here you don’t get the black burned pieces on the meat that you get on traditional grill, where the heat touches it much to much, burning it. To me those burned pieces taste awful , are spoiling all dish.
No offense but thats not a striped bass or a striped sea bass for that matter. Thats called a wiper. Its a manmade hybrid striped/white bass. You can tell by the uneven stripes. That said looks delicious thank you for sharing.
You dont realize about the moisture about scailing process. You learn from people who knows before you. Lets be humble AND embrace knowledge AND gift credit to who gift you that knowledge.
When you season the skin the moisture comes off and doesn’t get crispy smh. You go thru a whole process to look cool and don’t know you shouldn’t season fish on the skin side .
No, No, No! Dude it's a striper. You butterfly it with shears and slow bbq with smoke. You keep the bones because they add flavor. No scaling because the scales insulate it during bbq. You are also wasting meat. Dude, striper heads fricken stink so bad when you cook them. Remove the head. By the way stripers are not a Baja game fish. Whole thing was weird and you know little about what your working with. The top looked raw! Lol. People DONT want boneless

great way to cut...but only cooking on one side and no other spices like cumin or coriander or cayenne, like use black pepper at least dang
This fish is so buttery it’s hard to put spices on it. The smoke and salt and vinegar and good oil are all you need
