it's amazing I see almost all these videos' from restaurants in IRAN,they use small bottles of oil or small packs stuffs that is made for everyday kitchens at home!! they don't make big bulk 10 or 20 gallon oil or 50 pounds of sugar salt and other stuff? we use to have those before 1979!
At least mention the name of the establishment in English titles for those unfamiliar with reading Farsi. Of course, Google Lens can do the job partially if the video is paused.
I remember high quality famous restaurant,all the marinade stuff used to premixed by owner every day or day ahead of time so the cook can not take the recipe with him if he quit also it will be exactly The same every day!,thing that don't exist any more I guess they make below average kebobs and just cover it with melted butter and other stuff!
They are known as seekh or stainless steel metal skewers. You can find them in Turkish, Persian or middle eastern stores. Also can find them online but they tend to be pricy online I find.
The video of eight chicken grill is very impressive but after watching it, the curiosity increased, the initial seasonings include a special spice without giving any explanation and no details were given about its mix of different spices in it, similarly after the basic marination, many different sauces were added without any mention or explanation. This creates distaste and curiosity in the audience and makes them lose interest in the videos theyre watching, the effort should be given for every step and about the spice mix or combination in ingradiants using in a dish.

اولش که دستکش دستت بود کارت درست بود و حرفه ای ، ولی بعد متاسفانه خراب کردی با دست بدون دستکش .
