For anyone interested in the lemon (or lime) powder. Amazon sells different sized boxes of both lemon and lime. I add the lime to most Mexican casseroles. I also buy small 4oz cans of chopped mild green chilis by the case. Because of his arthritis, my DH no longer eats tomatoes in any form, so I substitute canned red pepper strips and a new product I’d not known about - canned green chili enchilada sauce. We don’t miss tomato based salsa any longer.
I have never seen the powdered lemon or lime pkt in stores. Is Amazon the only way to purchase. Loathe buying on line. I have lem9n and lime juice. Different brands have different size containers. I kno i hav knorr mexican rice but couldnt find it so used knorr taco rice and added a diced mexican/ or salsa tomato with chili!!!. Wouldve added a can of chilis with mexican rice too. maybe add a can of corn if needs to be stretched!!!!black olives and/or black beans? big meal if needed. For me each can or lg ingredient equals 1 meal per person.
I don’t buy those packets of rice or pasta, but Mexican rice is easy to make from pantry staples. Arroz con pollo (rice with chicken) can be as simple as a cup of rice, can of chicken, small can of salsa. Anybody who has 5 gallon buckets of rice should become comfortable with cooking rice lots of ways.
Instead of a jar of water, you could just add a bottle of water to the zip lock bag. Those jars can be better used elsewhere. Thanks for the idea, Alaska Granny!

Definately bagging your meal for the pantry. My family loves anything chili. My recipe idea is, Quick cook pastas are wonderful. 106° for next 11 days so making cold suppers in the early a.m. Quick cook penne pasta (3 minute boil) add 1 large Costco can chicken vegie on hand, chopped . I used steamed asparagus, then raw celery, carrots, green onions, mushrooms shredded cheddar jack and Dollar Tree applewood bacos on top. The dressing was mayo, couple teaspoons milk, garlic snd onion powder snd dried parsley. It was delicious. If using tuna or salmon, shrimp or crab switch dressing to mayo, dill, lemon pepper.
Wow! That true lemon and that canned chicken breast sound quite exciting! Never saw those things where I live, or anything similar. Such a shame. I got lemon pepper seasoning but I can barely taste any lemon on it. Tried lemon and lime essential oil but it smells like dish detergent, not like something you expect on food LOL. This is a very appetizing 5 minute meal too!!! During good times I'd like to grill a chicken breast or something else, but because I am used to have a higher protein portion (as a bariatric patient I must eat as much meat as possible). What about using a can of corn along with the can water to conserve water? Looks good. If Knorr has a Spanish rice mix how about a can of shrimp or chicken, a can of tomatoes and a can of peas? Use the water from the cans. Yummy!
Adding a 16.9 oz. bottle of water would prevent possibly breaking your jar and also add less weight to your package. Wicked Prepared is where I learned that. She also uses the kid sized bottled water when less is needed. Your recipe sounds very tasty. I might add a small can sliced olives. Will try it soon. Thanks.
