INFORMATION
Rava Kesari is a traditional Indian dessert made from semolina (rava), sugar, ghee, and flavored with cardamom, often with a saffron tint.
Ingredients:
1 cup Rava (semolina/suji)
1 cup Sugar
2 ½ cups Water
¼ cup Ghee (clarified butter)
8-10 Cashews
8-10 Raisins
A pinch of Saffron strands (optional)
¼ tsp Cardamom powder
A few drops of food color (orange/yellow) (optional)
Instructions:
Prepare the saffron (optional):
Soak the saffron strands in 2 tablespoons of warm water and keep aside.
Fry the dry fruits:
Heat 2 tbsp of ghee in a pan, fry the cashews until golden brown, then add raisins until they puff up. Remove and set aside.
Roast the rava:
In the same pan, dry roast the rava (semolina) on low heat for about 5-7 minutes until it turns slightly golden and gives a nutty aroma. Be sure not to burn it. Set aside.
Boil water:
In a separate pot, bring 2 ½ cups of water to a boil. Add the saffron-soaked water and food color (if using) at this point.
Cook the rava:
Slowly add the roasted rava to the boiling water while stirring continuously to avoid lumps. Reduce the heat and cover it for 2-3 minutes until the rava absorbs the water.
Add sugar and ghee:
Add the sugar and mix well. You will notice the mixture becomes a little watery, but keep stirring. Slowly add the remaining ghee little by little and mix well until the mixture thickens.
Flavor and garnish:
Add the cardamom powder, fried cashews, and raisins. Stir everything together until it reaches a thick and soft consistency.
Serve:
Once done, turn off the heat. Serve the Rava Kesari warm, garnished with a few extra cashews if desired.
