1 teaspoon Dijon mustard
200g canola oil
Lime juice to taste

100g oyster flesh, sashimi grade, chopped
1 tablespoon oyster mayonnaise
1 tablespoon green apples, brunoise
1 tablespoon shallots, brunoise
1 tablespoon scallions, finely chopped
Lime juice to taste
PASSION FRUIT JELLY (VEIL)
140g passion fruit puree
2g agar agar
1 tablespoon sugar
COCONUT SAUCE
5 tablespoons coconut milk
2 tablespoons heavy cream
2 tablespoons oyster juice
Lime juice to taste
Salt to taste

Looks wonderful! I did oyster in passion fruit jelly as Heston Blumenthal, but I think your version is even more interesting and amazing. Just one question - for the coconut sauce it was written Tablespoon (Tbs) on the screen but looks like you used Teaspoon (tsp). I will be really appreciate if you give me a comments.Thank you.
