MAKING A GIANT COLIN THE CATERPILLAR CAKE

  • Welcome to another GIANT creation and this one is a special birthday celebration for me and the famous Marks and Spencer Colin the Caterpillar.

    FULL RECIPE:
    Swiss Roll
    3 large eggs (room temp)
    100g caster sugar
    1 tsp vanilla extract
    60g self-raising flour (sieved)
    ½ tsp baking powder (sieved)
    4 tbsp cocoa powder (sieved)
    2 tbsp of just made hot coffee
    Buttercream
    125g of salted butter softened
    250g icing sugar (sieved)
    75g cocoa powder (sieved)
    1-2 tbsp of whole milk
    1 tsp vanilla extract
    Chocolate coating
    200g milk chocolate melted
    100g dark chocolate melted
    2 tbsp of double cream
    Face
    50g melted and made into a flat disc and stick smarties as eyes or be creative
    Decoration
    20g white chocolate melted to drizzle to decorate
    Smarties to decorate
    Method
    1. Preheat oven 200C
    2. Grease and line a swiss roll tin with baking paper, and make sure it fits neatly in the corners (so you will need scissors)
    3. For the sponge - In a large bowl, using an electric whisk the eggs, vanilla and sugar so the mixture is pale and frothy. Sift in the flour, cocoa powder and baking powder and carefully fold in using a spatula until all the flour is combined into the egg mixture. Then add in the hot coffee and use spatula to combine again. Be careful not to overwork the mixture and therefore knocking out the air bubbles.
    4. Pour the mixture into the lined tin and spread evenly to the corners with the spatula. Bake in the preheated oven for 8-10 min, or that it is well risen and firm to touch (there will be shrinkage from the edges of the tin).
    5. Dampen a tea towel and lay out flat on the table, then put a piece of baking paper large than the swiss roll on top of it, dust with icing sugar. Then flip the hot swiss roll carefully on top of the dusted paper so it is upside down.
    6. Now using the tea towel to help, (roll from the shortest side) tightly roll up the swiss roll with the paper inside, then leave to completely cool.
    7. When the cake is cooling. Make the other steps.
    8. Make the face- melt the chocolate and spread into a disc face shape on parchment paper. To speed things up pop into the fridge to harden.
    9. Buttercream - whisk the butter so it is fluffy, sift in the icing sugar and cocoa powder, add the milk and vanilla extract (the more milk you add the runnier the buttercream…depends on your taste)
    10. Body - Heat up the chocolate in a pot with the cream on a very low heat, this is a very very thick chocolate ganache.
    11. Uncurl the swiss roll, remove the inside paper, then smother the inside of the sponge with the buttercream and roll back up again.
    12. Optional step - you can now cut strips of the sponge away (in equal distances apart) down to the next roll of the sponge to give the indentations on the caterpillar’s body but you don’t have to. The strips you cut away can be cut in half used as the feet.
    13. Now lather in the melted chocolate all over the body of the caterpillar using a small spatula or knife and then melt more white chocolate and drizzle on top and decorate with smarties. (If you want it to be very neat, I recommend you do your chocolate covering of caterpillar on a grill tray or rack, or you can wipe up the board you place him on!)
    14. Now stick the face on the front of the end of the swiss roll using some buttercream or leftover chocolate. You can stick on eyes using smarties or chocolate buttons or using more melted dark/milk chocolate.

    I was privileged to have a piece of this giant Colin the Caterpillar cake. It was lovely and fluffy, and the chocolate coating was really thick and indulgent. Mmm! I may even try making a little one myself. Thanks Suzie.
