    Wonderful recipe! I really like the way you spread the mix in a pan, chilled it, and cut it in circles. That's a really nice look. I volunteered as a cook at a homeless shelter, and we often had a LOT of mashed potatoes left over, and I mean a WHOLE lot - buckets. I said to my colleagues, "Let's make potato patties". We did, and WOWOWOW! I'll be volunteering again, and this time I'm going to use your technique. The portion uniformity has a very clean, appealing look. They can be weighed and frozen. Fabulous! The only changes I would make would be turkey bacon instead of pork (for health reasons), and bake them instead of frying for the same reason. Oven at 450F to 500F preheated - a fast bake to make the cakes go POOF in the oven. Arrange cakes on a baking sheet 1 inch apart for even heat and browning. Drizzle or spray light veggie oil on EACH cake on BOTH sides. Throw them in the even. Turn them once till golden brown. Cooking time total around 15 to twenty minutes. You can feed a crowd with these beauties. Thank you so much for sharing your expertise!

    Your recipe is an elevated version of what I grew up with. My mom always made too many mashed potatoes, on purpose. The left overs would be refrigerated. The next day she would make fried mashed potatoes. She pretty much did them as you indicated, but no cheese and she formed the patties by hand. She fried them in good ol' vein clogging, heart stopping lard until they were dark brown and crunchy outside. We ate the patties with gravy, sweet/sour red cabbage and usually sausages. Dark beer to drink.

      Hi. Sounds good and I love dark beer.

    • @jasondaniel918
      @jasondaniel918 5 лет назад

      @white zebra Yup! Mom's family was of German heritage. Dad's was Scotts. Alcohol (in moderation!!!) was normal for us - and our extended families. The dark beer was Yuengling Bros. "Porter," which was commonly prescribed by doctors for their cardiac patients back in that day. It was considered health "food" and always welcomed at the table.

    I did something similar just now but instead of green onion, I sauteed a medium yellow onion in a little butter and then let it simmer in some Worcestershire sauce. Without a doubt, that's my favorite thing I've ever made.

    I always like to leave the potato peels on when I mash the potatoes for the extra fiber content but great video and nice idea to use the Thanksgiving, Christmas, and New Year's leftovers. I also like adding corn, cilantro, and the fried bacon oil to the mashed potatoes for extra flavor and texture but just use whatever you have that's available in the kitchen pantry and fridge. Cooking is always improvising with what you have that is readily available.

    Been using my leftover mashed potatoes for years to make potato pancakes as we call them. I just use 1/2 eggs depending on amount of leftover , then 2 tbsp flour , onion, a little milk, just till moist but holds together and then fry in pan in hot oil. Outside crunchy brown ,inside nice and creamy.

However the plain potato mash cakes are amazing and more versatile; the bacon is nice too. This would be great accompanied by eggs, fried or scrambled. 😋🥔🥔🥓🍳😋

    If you used one hand for wet (eggs) and the other hand for dry (flour and bread crumbs) your fingers won't get goopy.
    I wonder how those cakes would work in an air fryer. Those looked good

    Dave, forgot to mention, although these are delicious with italian bread crumbs, if you want them exrta crunchy then use japanese bread crumbs called panko, those are delicious also, and very crunchy.

      Panko bread crumbs are great! I usually put the bread crumbs in a plastic bag and crush a little to break down to smaller crumbs because when fried they don't over brown as easily..

    the original potato cakes stem from left over mash potatoes. we would use them up and make up cakes, adding, cooked onions, celery, cheese in butter. mix ,egg, salt, pepper .. then place the cakes in flour, then fry in light oil until brown.(Bacon grease)(Size of fist)People do your research this goes way back its a pour mans dish, from the south, i know, we also make potato candy. from mash potatoes.: (yours is the CLOSEST I've seen yet on the internet. ) awesome. course your older too. nothing personnel. great job, hillbilly me.

    • @ladykiri42
      @ladykiri42 5 лет назад

      Phoebe Tamba - Sorry dear, but I don't understand why you say this is expensive? Please let us know? Potatoes, butter (or possibly margarine), salt, pepper, small amount of bacon (that could be left out, I'm sure), then bread crumbs (you can make your own easily, from left over bread), maybe a couple eggs. Please enlighten me?

    • @phoebewilson8936

      @@ladykiri42 have you ever tried cooking a simple recipe that the end result seem so exquisite and expensive? Do you not know parable? Yes I get the simple "CHEAP" most ingredients used in this dish. It produced a very beautiful looking dish or in my words "EXPENSIVE"
      You must be very literal!!! Wow

    • @ladykiri42
      @ladykiri42 5 лет назад +1

      @@phoebewilson8936 - Thanks a bunch for your answer. Yes, I have frequently done that, since I have the knack for imagining how ingredients will taste when put together with something else. I've been cooking now for about 63 years, and often come up with my own recipes. I think you're using the word expensive similarly to how those of German descent use the word "dear", meaning costly to them. Sorry, I do not know a parable that uses that term "exquisite and expensive". My dear husband is a retired psychologist, so I had to learn to be very literal when speaking to him. Btw, I enjoyed learning quite a few German (technically Prussian) recipes from my dear Grandma who came to U.S. with her parents when she was 6. ;)

    • @phoebewilson8936
      @phoebewilson8936 5 лет назад

      @@ladykiri42 that's quite a story. Being married to a psychologist must be a handful I can see that but must be a very good journey now I understand how you're so literal. I never knew my English had that must german in it hehe I apologize for that.
      I've been cooking too as early as I know how to handle a sharp blade. Been expressing my imagination through cooking as I too am fascinated with how a mixture of different spices, ingredients can make a phenomenal dish and learn from my own mistakes as I go along.
      Cooking really is a art.
