We do steak on our Weber basically the same mate. Olive oil, salt and pepper, four minutes each side on a sizzling plate. No fiddling or turning until the four minutes has elapsed. We regard that as medium-rare, but everyone is different. Another top filming exercise with the drone and waterproof gear.
Steak looked great Keelo. Once when working in the Bight, coming in for lunch you could only see the whites of the cooks eyes thru' the smoke. On cutting the steak, beautiful pink inside, outside charcoal black, the dill had cooked them on top of the diesel fired stove, and it was glowing. He used to serve salads in plastic buckets placed on the table to self serve, Sea cooks are a race apart. Great camping spot, watch the bungarras Sarah, if a dog spooks them they can run up you to perch on your head, bloody sharp claws too! Cant wait for you to reach Bermagui.

Keelan bring your steak up to room temp then throw it on the red hot bbq for 3 min on one side flip to the other for 2 min then rest it in foil for 5 ! Love the new set up guys :)

Gillard's used to be way better way back when. There was no restricted access to Nelson's and Middle lagoons. You could camp anywhere. Now they have you restricted to such a small spot that it gets crowded. It also had a proper 4wd track down to it which kept numbers down as well. Definitely not for caravans.
Next time leave it out on the bench under paper towel to get to room temperature the pat it down with paper towel and then salt and pepper it will taste 100 times better
Steaks were definitely medium well mate. The only difference between rare and medium rare is that the RED center is cool if rare and warm if medium rare. Both require a very hot grill to sear (260 C+) with the lid off (heating each side from the bottom only). Your grill won’t do it unfortunately. Next time try a hot skillet with a small amount of veg oil and butter. Heat the veg oil to 200 C (just below the smoke point) and add the butter. Put the steaks on right after the butter stops foaming. You will get a good crust on the outside in a short time and can still keep the inside of the steak red (raw). You can put the steaks on edge if you want to seal the edges and render/ crisp up any fatty bits. Use a spatter screen as it will make a mess in that beautiful kitchen.

I reckon the steak was a touch on the medium side of medium rare, but still looked super tasty. I have a Webber at home and it’s taken me a while to get the meat cooked perfectly every time, so you did good for a first crack K.

At the start of the video, you mentioned how you weren’t sure whether you would be able to get to the camp site due to not knowing whether the road was suitable or not - which brings me to my fundamental fear when caravanning - what do you do if you get stuck? So…… what would you have done if you found the road unsuitable for a large van? Reverse out? Unhitch the van and drag it around? Reverse the van into the bush and 5/7/9 point turn it? Really curious what you would have done. Please Dr Keelan - help me overcome my fear!! 😜

The wallaby was a fast learner, took the kangaroos a few dance lessons to get it down pat! They all got there in the end hahaha thanks mate
