20 kg raw mangoes 4 kg salt (2 kg + 2 kg) 1 kg red chilies 1 kg haldi Half kg saunf Half kg methe seeds 250 gms kalongi 2 ltrs sarso oil for first mix Sarso oil to dip pickle completely Ferment for 7 days - shake/ mix everyday Can add garlic in it.
We've made 6-7 kg mango pickle during Ramadan. Exactly the same recipe. But we add crushed mustard seeds, garlic cloves, whole red chilli and white vinegar. I love rice, masoor dal and pickle 😋😋😋🇧🇩

I don’t know much dear. But after cutting the mangoes we sun dried those. You can keep the pickle jar in the sun daily. We also do it to prevent growing fungus.
