I made this yesterday. I highly recommend Fresh noodles over the dried rice noodles. Dry rice noodles just don't give it that mouth feel that makes Chao fun so good. Also, if you aren't used to shaoxing wine, I put less than the recipe calls for. When I marinated my meat in it, I didn't exactly follow the recipe so that was bad on my part. But I had over a pound of meat and put about 2 tbsp of the shaoxing wine and after frying up the meat, it smelt strongly of ammonia. It was so strong like the smell of bleach hair dye. The tast was good but not the smell. For the overall chow fun, I quadrupled the amount of sauce because I was making 4 times the amount. It could use more soy sauce and less shaoxing (if you are new to shaoxing flavor). I also recommend sesame oil, it takes it to another level! Another thing I recommend is adding choy sum inside the Chao fun or on the side. SOO GOOD! ALSO! Being able to cook the meat on each side is important. I cooked in bulk in a pot because I didn't have a wok. I found that cooking such a large batch not allowing each meat piece to have time to cook on its own at the bottom of the pan created like a batter, gravy like consistency on the meat because of the cornstarch. It's important to let each piece fry so the cornstarch can become like a crust. Edit: So I figured out it was the baking soda that made it smell like ammonia. Just did another dish and used the baking soda trick and I smellt ammonia.

Made this recipe exactly (weighed by oz/tsp/tbsp). After tasting it, it definitely is missing a flavor. For those of you who have had this in chinese/cantonese restaurants, this will not come out the same. It does have all the ingredients beef/noodles/scallions/bean sprouts but the sauce and beef marinade is missing some flavors. All in all, I rate it a 3 out of 5. It’s not bad. I’m trying to find a restaurant recipe for this and perfect it. This definitely helped a little so thank you!
