Vegan Mushroom Soup

Could you use cream instead of coconut milk if you and not concerned about the soup being vegan or would you use milk and cream?

You could use either. Milk will give it a subtle creaminess with a more neutral flavour. Heavy cream has a higher fat content that will give it a thicker, richer, creamier texture and flavour.
