I will have to test that for sure. I wouldn't think keeping it attached to your grill or smoker in harsh and cold Wisconsin Winters outside would be good. But so far I have been impressed with the ChefsTemp products.
I think you could as long as you could hook up the fan correctly. I would guess it would also depend on the fuel, big pieces of wood might be harder to control compared to charcoal.
