- Hey Friend! Join me in the kitchen as we make 2 More Meal in a Jar Recipes, convenience Meals for the Pantry Shelf. These Meal-in-a-Jar Recipes will make dinner time easy, just dump, heat and serve! I'm always thankful to have convenience meals when I'm short on time and love that they are good for you too! We are also rendering down some Beef Fat into Tallow for some projects later on like Soap, Balms, Salves and Chapsticks!

Both Recipes are Approved recipes by Ball Canning
Ingredients per quart Jar:
Chicken Curry:
1lb Chicken Breast Cubed in 2 inch chunks
1/2 cup finely chopped onion
1/2 cup finely chopped tomatoes
1/2 cup peeled and diced potatoes
1/4 cups raisins
1 tsp salt
2 tbsp fresh cilantro
2 tbsp tomato paste
1/2 tsp curry powder
1/2 tsp garam masala
chicken broth
Chipotle Beef
1 lb beef brisket trimmed and cut into 2 inch chunks
1 cup chopped onions
1 tsp salt
1 tsp oregano
4 cloves garlic
1/4 cup fresh cilantro
1 chipotle chili pepper in adobo finely chopped
1 inch headspace required, processed at 10lbs of pressure for 90 minutes.

A word on siphoning:
Siphoning is caused by temperature fluctuations. Now, in canning there will ALWAYS be temperature fluctuations. The very nature of pressure canning is to heat your jars to the point that pressure is created. this creates a vacuum. that is the only way to get your water above the boiling point. Your job is to control that heat fluctuation so that only air is forced out the jars, not liquid.
Any sudden pressure change during the canning process can cause water to gush out of your jars. That is siphoning. Changing the temperature changes the pressure differential between the product inside the jars and the water and atmosphere outside the jars. Here are some ways to prevent this...
1. Match your jar, canner and product temperature as much as possible.
2. After the lid is on bring up the temp slowly and allow a full 10 minutes of venting before you drop the weight.
3. When you reach proper pressure, lower the burner temp as low as you can while maintaining pressure. Find the "sweet spot". This will take some practice. Try canning some water to find it without risking food spoilage.
4. When canning time is up wait 5-10 minutes after pressure has reached zero before removing the weight. Wait 5-10 minutes more before removing the lid and then another 5-10 minutes before removing the jars.
There are other factors. Proper head space is essential. Sometimes in raw pack there is air trapped in the product, so you have a lowering of water level, but that is not siphoning, and it won't be much.

Just an FYI, you can pour the warm tallow through cheesecloth to remove the sediment as well.

So just processing it like this and scraping the bottom is enough to get the beef smell out? I have seen people add water and salt but that seems scary. I have not done it yet but anticipating lard and tallow soon. Love your videos!

I wonder if a vegetable peeler, or razor would work better to scrape off the settlement of the tallow
Thank you for the video. I am saving up pork fat and beef fat to make lard and tallow. That would be the first time ever I do that. Bag with pork fat is getting quite full so I'll be giving it a go very soon. The chicken curry recipe looks delicious. I had to delay getting a pressure canner, more important expenses came in. Tho I really want to try it. I might just give the recipe a go on the stove.

I'm a brand new canner. I saw that with other similar recipes had to be hot packed. If these do not have to be done that way, how do I know when hot pack is necessary?

Hi, I'm your new subscriber, I'm from Switzerland, I have a question, do you use tallow to cook?? but it has a very strong smell. I thought tallow was only used to make soap, I would really appreciate it if you replied.❤❤
It depends what tallow you use, leaf lard is found around the kidneys, it is pure white and for the most part odor less. I like to use it for cooking, baking and soaps and salves ☺️

how do you clean up that cheese cloth
Scrap into a bowl, rinse under water and I throw into the wash!

the meals in jars for how many people are they?
They will feed our family of 4 for one meal when prepared with sides. We have 2 adults and 2 small children.
Do you render pork fat?
Not myself, it’s hard to find really clean high quality pork fat here. This fall though, our friends are raising a pastured pig for us and I’ll be rendering that the same way as the tallow!
