Blanching takes away the flautesence and bloating effects from gobhi. I smear the kadai with very little oil and sautee the gobhi in it. Works fine. Great recipe 👌 😋 👍🏻 I always include the stem part. Very meaty and juicy
Yes, but in Mumbai I have never found a keeda inside the gobhi. In South India we really used to avoid having it because of this and the only way to clean it from inside is blanching.
A different way for me to prepare aloo gobhi sabzi. I usually don't deep fry the veggies or add onion garlic. Quite bored with the style I make the sabzi. Next aloo gobhi is going to be your style.
