A vast range of fauna inhabit the world, ranging over virtually every landscape as well as the oceans and skies. Most of the animals presented are hybrids of two real world animals; sometimes this hybridization is explicit, at other times more subtle. There are certain exceptions though, such as Kuei's pet bear, Bosco, the herbalist's cat, Miyuki, or the messenger hawk.

If I lived in the Fire Nation, I would have a male dragon named Long, which means "dragon" in Simplified Chinese, a female messenger hawk named Ying, which means "hawk" in Simplified Chinese, a male turtle duck named Gui, which means "turtle" in Simplified Chinese, due to having the body, shell, and legs of a turtle, and a male aardvark sloth named Landuo, which means "sloth" in Simplified Chinese.

Your parents don't have to be benders for you to be a bender,tophs parents aren't,and piandaos parents were benders but he wasn't and katara and aangs son bumi wasn't a bender at birth.
Non-benders can have bender children. Other members of the family tree before Katara's parents and grandparents were probably waterbenders, since there were a few waterbenders in the southern tribe before the Fire Nation killed or imprisoned them in that battle near the beginning of the war (that blood bender in the Fire Nation town is proof of that), and there are a ton of waterbenders in the northern tribe, then Katara definitely had some waterbender relatives, even if they were distant or no longer alive.

Katara most likely had some type of bender ancestors and that’s where she got her bending from, if people could only get bending from their parents, bending would be MUCH more scarce.
