    Vegetarian Greek Gigantes
    Ingredients:
    2 cups dried gigantes beans
    Butter or oil
    1 onion finely chopped
    2 celery stalks finely chopped
    2 garlic cloves, crushed
    2 tablespoons tomato paste
    1 lb ripe plum tomatoes, skinned and coarsely chopped
    1 tsp dried oregano
    1 tsp honey
    1 tbsp red wine vinegar
    Fresh mint, chopped
    4 oz feta cheese, crumbled
    Sea salt and pepper
    Instructions:
    Soak beans overnight.
    Drain the beans, then put them in a large saucepan with water. Bring to a boil. Simmer for 45-50 min. Drain, reserving some cooking liquid.
    Heat butter or oil in a pan. Cook the onion, celery, garlic for about 8 min. Stir in tomato paste and cook for 1 min. Add the tomatoes, oregano, honey, vinegar, and beans. Add the reserved cooking liquid. Season with salt and pepper.
    Bake for 1 to 1.5 hrs.
    Let cool, then drizzle with olive oil, and sprinkle with mint and feta.
