If anyone does exactly as these guys instruct, you will almost guaranteed have a good drink. I don't play it half as safe with headspace, oxygenization or anything much else but i have never had a problem in 3 years. But do what they say and you will succeed :-) great teachers!
Hm my writing is a bit off. I'm not as seem as I drunk. I've been working nights, and English is my second language. Might taste some mead later though.
Thank you for your kind words and watching our videos!
@@1014p agreed. I had no idea English wasn't their first language and it is also way better than my drunk typing.
It's good to see when Derica gets to make a brew that she wanted. It's good to see her happy.
Little tip for you guys, with passion fruit if you use a stick blender on the pulp it helps to break fruit away from the seeds, low speed won’t break the seeds too badly. This is a method I use as a professional chef to make passing passion fruit through a sieve easier for purées
Great tip! Thanks for sharing!
@@CitySteadingBrews or use the plastic blade on a food processor. That’s my method to make seed-free passionfruit curd.
40:28 The look on Brian's face when Derica mentioned baked grapefruit :D
I'm an Aussie so a bit of passionfruit on a pavlova is delicious.
Thank you guys for producing such wonderful instructional videos, even in the aftermath of a hurricane.
Glad you enjoyed it!
"We're getting our mix all talked up today" lmao
Hey guys. I just wanted to say I hope you and your family are safe. Thoughts and prayers to you and any victims of the hurricane.
Thank you! We were lucky, but unfortunately so many were not. I hope they rescue efforts and clean up goes as smoothly as possible. It is heart breaking to see all the damage that occurred.
As one who works for FEMA, I've seen more than my fair share of devastation. If I'm called to that area, I hope I can be of service to the people of Florida.
I love to see you make 4 Meads all the same except for the type of honey that is in them. Wildflower, White tupelo , Manuka, Sorghum Honeydew or maybe Smoked Honey.
I love passion fruit, it sounds good as a mead.
Great video as always guys. New hair looks GREAT in braids, D. :)
Thank you!! 😁
Glad to see you made it through the storm....
That looks so good... i wish i had 101 passion fruits! Jealous
"Obviously we're not going to be that cool here..."
C'mon, now. You two are the epitome of cool.
LOL! Thanks John
I’m glad y’all did a passion fruit mead. Sorry that Brian didn’t like it. I love passion fruit so will likely make a mead or wine with it at some point. It’s good to know that it ferments true and without the issues that pineapple has. I saw something about pineapple recently that their is some sort of enzyme or acid (I can’t remember which right now) that causes problems when cooking with it in certain situations. One person found they were finally able to get success by using canned (not normally my preference) pineapple because the process of canning heats the fruit up to high enough temp that the (acid or enzyme) is no longer a problem. Perhaps that might work for brewing too? I think I’ll probably try it, I’d really like to do a pineapple passion fruit guava wine. Add rum and ground nutmeg after the wine is done and have an amazing rum punch!
I love the colors in your hair Derica!
Thank you!
I am definitely going to make this one two i love passion fruit
You guys should look into tea beer! There’s a local brewery near me that makes it and (I know it sounds weird) but it’s super solid.
I'm so embarrassed! I forgot about the storm. I don't watch the news. I hope you and trbos are safe and well.
We are all good!
I have zero inclination to make this, but I just like watching y'all make stuff sooooo here I am lol stay excellent 😎
Lol
I did a pasionfruit Ginger mead and I love it. it is so good chilled on a hot day. I used passionfruit puree andwill be doing it again for sure.
Sounds great!
Glad you’re safe after crazy weather enjoy watching and learning been a fan for almost a year been brewing 6 months love fallowing your methods
Thanks for the well wishes and watching!
Words are hard Bri, we all have those days. Great video as always guys. Definitely need a big mouth bubbler soon since it looks like it makes brewing with fruit way easier.
Thanks! And we do like working with the Little Big Mouth Bubbler when dealing with fruit.
2 gallon plastic brew buckets (food grade) are great for primary fermentations (not great for storage or secondary tho.) I really like mine and often move it to a 1 gallon carboy in secondary, and it allows for a truly massive amount of fruit to be added to a 1 gallon batch and then pressed out to create just about 1 gallon of mead or wine for the carboy.
Hello 👋 I have a passion fruit vine and although I like passion fruit, I get what your saying it’s just so tart if you want to make a juice out of it you need like 5 lbs of sugar (I’m exaggerating) but you get the idea that’s why if I want to enjoy it in a cocktail or as a juice I make it into a cordial which is just a simple syrup made with passion fruit which is delicious and versatile.
I LOVE!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! passion fruit!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
Have you guys ever thought about back sweetening with lactose sugar? It's non fermentable sugar so it won't kick off fermentation again. Also it adds a Nice creamy mouth feel. Just a thought for a future project.
We used lactose in one of our beers. There are many choices for back sweetening. Use what works best for you and your brew.
@@CitySteadingBrews guess I haven't gotten to that video yet lol. Been watching y'all for about 3 months now and loving all your content. Especially the D & D stuff. Big time fan and trying to catch up on the older videos! Keep up the great work and thank you for the awesome content!
pro trick that i got on reddit, you can make an airlock with one of those big straws that can be bent in the middle. instead of bending it twist it one turn. same can be done with flexible air tube 3/8 or 1/2 inch. you loop it and put just enough liquid in the loop to close the way and use a bit of wire to hold the contraption in place.
I did this, except I used my steam juicer to juice the passionfruit (listening to them pop in there was fun). It came out tasting like slightly fizzy, alcoholic grapefruit juice. We can only grow maypop type passionfruit here, but it tastes similar to the store bought fruit. One of my favorite brews!
The dyed hair!!!! Omg, so nice!
Thanks!
Loved the video guys. I absolutely love passion fruit and I make a passion fruit wine that’s amazing I leave mine at 0.992 (sorry Brian 😂) and I don’t use any tanning or orange peel. I honestly think is amazing it reminds me of a great Sauvignon Blanc from New Zealand I really like. I’ve never heard of people eating the seeds till today, I’ve only used it and seen it used for juice. Great job on this one.Btw try making it sparkling it is very good as well
You wanna try eating the fruit straight from the shell. Sooo tangy and delicious. Just swallow the seeds whole, no need to crunch them. Or scoop it out and drizzle the whole lot onto ice-cream or meringues with cream. Omg! I’m making myself hungry.
Glad to see you guys are ok 😎
Me and my gf made a gallon of passion fruit mead with just the pulp and juice, water, and orange blossom honey. It turned out incredibly well after it mellowed, with a little extra orange blossom honey to backsweeten. Didn't even need the added tannin as the fruit is powerful enough in the right quantity to linger (we used only 16 yellow parcha). Either way, you guys are in for a treat!
Poor Brian.....omg too funny....oh by the way we need a grapefruit mead!!!
Nope.
Ok, I have to make this one, with bought, frozen passionfruit pulp coz the fresh beauties cost beyond an arm and a leg here. Something tells me backsweatening with Maple syrup would work a treat.
It's really funny that you added the mandarin orange peel to this. I was curious about making a mandarin orange melomel.
We have a mandarin melomel coming out soon :)
@@CitySteadingBrews That's awesome I'm really looking forward to it!!! Thanks for the response and thanks for all of your content!!!
Brian and Derica, thank you for all of your hard work. Your videos saves many of us a lot of time and effort. And I like watching them. My favorite in the airlock video. Can you add a tannin agent such as raisins or black tea after fermentation has started? I'm making your lemon mead but the only tea I had was Earl Grey but it had some kind of oil additive. Thank you both. Edward
Yes, you can add tannins after fermentation has started. Commercially available wine tannin might be a great option for adding later in the game. amzn.to/3fBolg3
The Hair look's good.
You have become my go to, love your videos, all my home brews have improved so much.Much RESPECT 👍
Awesome! Glad to be of assistance!
101 fruits is nuts. I am making a POG mead right now and had to settle for a frozen passion fruit puree since each fruit was $6 EACH. So you have yourselves a $600 mead :D
Wow! Yes, we know that passion fruit might not be as readably available but at least you can get the puree.
lol passion of the fruit. I saw that movie in theaters when it came out and so many people were crying, i thought I was at a wake.
Yay! Passionfruit mead! I made mine with less passionfruit because I had to buy them… and it still turned out really, really nice. I added a little bit of sweetness but not much, just enough that there would be a little sweetness supporting the freshness of the fermented fruit. It’s a bit lighter in colour than yours and one of our favourite drinks on a hot summer evening. It pairs well with fish or with ‘faux fish’ dishes (crispy tofu in a sauce normally used for fish, for example), with desserts, with creamy dishes that would otherwise come across as stodgy.
Perhaps a mead with a lighter dosing of passionfruit would suit Brian more?
Edit: to alleviate issues with seeds/pulp, I scooped out the fruit, let the pulp sit with part of the honey for a bit (a few hours, in the fridge), then passed it through a sieve whilst stirring with a spoon. I added the resulting juice to the must. There was hardly any pulp left, mostly seeds and a few stringy bits. I’d have to check if I used pectic enzyme but I ended with a crystal clear brew.
@@littlebones88 - LOL!
If I’m not mistaken, Brian has served his country before becoming a photographer and then a RUclipsr. I think he’s faced worse than eating grapefruit. Fun image though!
Love it. Glad y’all are safe and sound. Well maybe not sound but safe. 😂
Lol!
Derica, I’ve gotta say, love the hair!
Aww, thanks! ❤
I really wish you guys were my neighbors 😂
That passion fruit batch will be the best tasting mead you'll ever have IMO. But then again I love lilikoi, so that might be a biased opinion. I hope you guys love it too!
Here’s a suggestion at shirt that says “ save the beezzzzzzz
Before the passion fruit was removed the mead looked uncomfortably similar to stomach bile 🤢
Thank God it got better🙏
Great video 👍. I enjoy the honesty in showing differences in taste. Most videos cut out differences in opinions but you left it in.
Again, good job on this humorous interlude 😆😁👍
Glad you enjoyed!
If you wanted a topic to talk over, I was doing some research on Calories and how much the yeast consumes during fermentation. I lost over 70lbs counting calories with exercise and with Brewing in my new realm of fun things to do I started gaining some back due to drinking. So today, I was doing the research on my own and I thought if I needed to know, then other people might want to as well.
Yes, it is a rather interesting topic. There are the calories of any unfermented sugar and then the energy of the alcohol itself. Most sources state Alcohol contains around seven calories a gram - almost as many as pure fat.
@@CitySteadingBrews I agree. So the big question is what is the difference between the start date and the end date? I personally think that it's a fun subject haha
I've been thinking about passion fruit mead lately and this video is a great reference. Thanks for that!
In my mind it'd be nice with dried apricots (instead of the usual and missing here raisins), but I wasn't expecting mandarin oranges, which gives me nice ideas.
Anyways, great content!
Raisins are a flavorant, so… not really a part of every mead :)
Could you do another capscimel? I’m making a “salsa” one where I roasted jalapeños, and put cilantro and lime as well.
Yay, Soo Happy to see you guys 💋💋💋💋🤸♀️🤸♀️🤸♀️🤸♀️🛡⚔🛡🌷🌷🌷💪😁✌❣❣❣❣
Yay! Thank you!
I like pink grapefruit. The higher percent of alcohol is a plus in my book :)
Do you have a recipe for a standard honey/water mead that could help a newbie out? I've seen recipes that require nutrient, malic acids, sulfites, etc etc, but then I see recipes that require nothing more than honey, water and yeast.. any help would be awesome! Also, love your channel and content, the "life partner" awkward cute comment in one of your videos had me dying over here. You guys make the perfect dynamic duo for helping newbs understand certain aspects that can seem to scientific to the norm lol.
Hi from Belgium, I started recently to make my own wine, I still am waiting to taste the result. But I like your channel, I learn a lot. But what I wanted to say is about the erythritol. I read on a forum that erythritol get sweeter taste by aging. So you better stop a little before you think you like the taste. I myself don't have yet experience with it but I will do three different levels to test my first wine brew to find out the right dosage. To conclude, I like your brewing shows very much. 👌
Thank you Johan! Good information and we have also found the Erythritol seems to be playing with Bri's blood sugar numbers so we might be refraining from using it in the future.
If you have any small mesh bags (for hops for instance) you can put the bag over the black tip of the auto siphon.
Yep, we've used those before as well as cheese cloth.
i got insipred to brewing because of your apple cider video! keep up the good work
That's awesome! Thank you for watching!
Cook some passion fruit with suger to make a syrup add it to vodka for a few days dont take out the pips though it taste great
Love your videos! I really hope that you, the cats and the plants survived Ian as well as possible! ❤️
We did! Thank you for the well wishes. Our hearts go out to all those that this horrible storm affected!
If you put pure Star San in the airlock, it will depend if the airlock manages to make it's saving throw for the outcome. If it makes a fumble, you will have Star San wine ;)
Lol! We have many viewers tell us having saving diluted Star San in a bucket and later finding a puddle. I fear pure Star San would give that airlock a save at disadvantage.
Love your videos. Have y’all ever considered making a brew and trying to accidentally make vinegar on purpose?
We have made vinegar (on purpose) but we have yet to make a video on it. Thanks for watching!
Love the videos, you guys helped me make my first good mead. I can attest to the air lock, I found about a dozen fruit flies trapped in it instead of in my mead.
A banana pineapple and passion fruit sorbet would be awesome to. Ben and Jerrys use to make something like this called Jamaica me crazy that was really good.
News alert!!! I just caught some of my yeast READING and listening to Pink Floyd!
LOL!
My teacher said the same in the 90s 😆
I'm in Tenn and have planted 2 plants 1 died the other is growing slow hope it will take off next yeay
It IS a good method @11:46
I just made passion fruit kombucha and ITS SO GOOD! I used a passion fruit syrup from Costco. I’ve also been using that passion fruit syrup with lychee and also with grape juice. So so so yummy. I love passion fruit.
Also I was reading my wine maker's handbook at recipes that came with my wine starter kit and I came across 1 called corn whiskey wine and thought you may like it
Thanks for keeping us in mind. Funny thing though, of all the whiskey's we have tried, we both tend to not like corn based ones.
I love your channel. I’m making my first mead tomorrow!
Hope you enjoy
If someone served you a Honey Passion fruit platter with some crackers and cheese like a charcuterie board, you'd be really happy. So this drink will pair amazing with some cheese and crunchies.
It's spots like 101 dalmatians, but yellow and delicious!
Brian installed a decontamination ring between the kitchen and the dining room ... it mists Star-san
LOL!
Haha
There are a lot of wild banana passion fruit vines here in Dunedin (New Zealand not Florida)
I have been thinking about making a wine or mead with them.
Thanks for the video :)
Lol words were hard that day
Plastic or rather most plastics are neutralizing to acid just and fyi it’s why industrial companies use those big blue plastic barrels to hold large amounts of acidic liquids.
Of course it depends on the plastic as the Star San itself comes in a plastic jug. We have many viewers tell us of having saved diluted Star San in a bucket and later finding a puddle. I fear pure Star San would give that airlock some trouble. I don't wish to risk it personally and thus don't recommend it to our viewers. Of course, if you feel that is the best route for you, then carry on.
@@CitySteadingBrews very true
Just a suggestion but instead of cutting back on the passion fruit vines, maybe start a trade network with others for things you can use with the extra production.
They are taking over and crowding out other things we want to grow.
Pectin also is more likely to ferment into methanol, so pectinase makes sense to add in general, because that stuff ain't great for you.
Air lock stopped a gnat this week for me.
Can you use monkfruit sweetener instead of arythrotal? (Sorry I butchered that spelling)
i love passion fruit or granadilla as its called here in South Africa it might be the kind that we have here but I wouldnt say its anything like grapefruit its more similar to pineapple a tart flavour with a bit of sweetness its good in yogurt. My mother in law cant eat it because she says its too acidic but she doesn't like pinapple or lemonade or anything sour at all.
Everyone has their own tastes! To me, pineapple is sweet, not sour, and I hate grapefruit, to me, and this is my personal taste, passion fruit tastes a bit like grapefruit. Not exactly mind you, but that's a flavor component in passion fruit to me.
@@CitySteadingBrews totally but I also think it might be regional the pineapple we get here are sort of sweet but lean more sour and acidic only the canned pineapple comes off as really sweet too me but our granadillas are about the same level of sweetness and tart to the fresh stuff it's probably how it's grown and the specific variety that gets grown here the grape fruit we get are extremely bitter they are ok if you add sugar but not super worth it to my taste buds I'd rather spend money on oranges or lemons. But If you do like sweet fruit might I suggest trying dragon fruit in a mead it's a softer flavour but if you could find the purple/pink variety it could give the drink a really cool look.
Could totally be that!
Great video as always does not seem like my kind of brew, but looks great nonetheless.
Please do a pumpkin spice mead for the season!!! 😊
It's on "The List"
@@CitySteadingBrews Awesome because I can’t find a recipe online and I have never worked with these kind of flavors before.
Enjoyed watching you make the brew. Was that a can of Spock on the shelf above Derica's head?
LOL! Yes Spock was hanging out in one of Bri's drinking glasses. He enjoys roaming the shelf. It's kind of like Elf on the Shelf, but it's Spot the Spock. LOL
How about "PTA" Preliminary, Taste, Assessment.
If you have mango juice or mead on hand, blend it with the passion fruit mead you just made in a glass.
I've been blending it with our Pineapple Mead, Cointreau, Lemonade... all the things! 😉
I ahve a question for you two, to test your brewing minds. How would you make a butterscotch flavored wine and would it be worth it flavor wise? Looking forward to your answer.
Honestly neither of us are particularly fond of butterscotch so we haven't thought much on this. Perhaps caramelize some brown sugar? A bocheted wine, if you will? I don't know how to get the buttery notes. Maybe lactose?
@@CitySteadingBrews Have you had much luck with syrups or cencentrates? I saw one other youtuber did it with a concentrate, but i am curious if you have had luck with that route in the past.
A question and a comment. Question why do you prefer dry yeast over a liquid yeast like white labs? Comment on just buy an airlock in my opinion there is literally no excuse to not buy one because you can get a full one gallon starter kit minus bottles and a kettle from northern brewer for $60
Next time put plenty of ginger in it too, you'll be amazed at how much better it is.
I wish you didn’t add the erithrotol, It appeared Derica appreciated it better before the sweetening. It looks like this was an excellent passion fruit brew. I’d love to know what varieties of passion fruit Derica planted. It sounds like passion fruit heaven
I enjoyed it sweetened too to be honest. I think it would be lovely carbonated as well but I'm a fan of carbonation, particularly with these tart and bright tasting brews. We have the purple variety of passionfruit, specifically "Possum Purple"
I haven't found it in your video list, but have you tried prickly pear mead?
Try it as a mixer
So you mentioned in the video that you can add pectin enzyme when mixing your must using fruit, or during secondary to help clear the Mead, but to use double the amount. So my question is can you do both? If you add it to the mix, can you add the same amount during the conditioning phase? Or is it one or the other?
It won't do more. There's only so much pectin in there.
If you hold a small weight at the "top" of the bag (, in or out), then wrap the cord around the bag and the weight to keep the weight in place, your bag will stay totally submerged. I also tie a string around the bag and the weight at the bottom of the bag before I put the fruit in.
Second, I don't use nut bags,. Nor do I use the bags with slightly bigger holes for squeezing fruit. I have gotten better results with bags with holes the size of a pen or pencil tip. Yes you get more sediment, but the strawberry and raspberry seeds that could go through the holes, don't. Racking is easy and does results in clear wine.
We have tried multiple methods of tying and weighing the bags. Placing the weight at the top often gets moved when swirling the brew. At least that has been our experience. If you find a method that works well for you then stick to it! 🙂 Thanks for the suggestions.
Lol you did dump it out. But it was back into the fermenter
I’m starting my passionfruit mead today but I’m using frozen seedless pieces of passionfruit which I’m assuming is just frozen juice cubes but excited to see how it turns out
Could be juice and seeds likely.
@@CitySteadingBrews also happy to report I tried your strawberry banana mead recipe and it turned out fantastic!
Awesome!
I can stop guessing passion fruit now! Lol
LOL!
Would be interested to see how kiwi, or something lighter like strawberries, would go in this...send me some passion fruit?!!!
I love passion fruit. I would recommend passing it through a sieve so you can remove the seeds and end up with just juice. Could make your process a bit easier. I have never made mead with passion fruit but make a drink akin to lemonade with the juice and I eat the seeds (sorry Brian) with a touch of Tajin. Love your videos, they have helped greatly in my mead-making. Cheers!
Derica here and more than likely I will just eat them. No complaining from me! 😊 Great idea on running them through a sieve!
Maybe you should added honey too
If we added honey (or any other fermentable sugar) then we would have had to pasteurize it as well to avoid restarting fermentation.
