But to be honest the reality is that even if 5 years experienced SAP consultant is getting a job, He is having very limited area of work where mostly he is working on excel spreadsheets to support the production issues.. So thats way we are not having that bigger level picture of working on solution confirmation workshops, requirement gathering and converting business requirements into SAP tool.

Thank you for sharing your perspective. It's true that in many support roles, consultants may spend a lot of time on tasks like resolving production issues and working with Excel. However, the scope of work can vary significantly depending on the type of project and the company's processes.
To gain experience in larger areas like solution confirmation workshops, requirement gathering, and converting business needs into SAP solutions, it often helps to seek opportunities in implementation or rollout projects. Building expertise in newer SAP technologies, like S/4HANA, can also open doors to more strategic roles.
With the right focus and continuous learning, you can expand your skill set and gradually transition into these larger responsibilities. Please feel free to reach out if you'd like guidance on how to pursue such opportunities.
