TURKEY TACO SALAD RECIPE//
1 lb. ground turkey
Homemade taco seasoning (see below)
Unsalted black beans, washed and drained
Red onion, chopped
Tomatoes, chopped
Lettuce
Avocado, cubed
Olive oil
Salt
Avocado oil spray
Your fav taco sauce (I use olive and salt)
HOMEMADE TACO SEASONING
1 tbsp chili powder
1 1/2 tsp ground cumin
1 tsp paprika
1 tsp sea salt
1/2 tsp ground black pepper
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp dried oregano
1/4 tsp crushed red pepper flakes
Cook turkey in avocado oil spray on medium high heat till fully cooked (break the turkey apart with the spatula and add a dash of salt)
Add black beans, taco seasoning and 2/3 cup water, stir, bring to boil (add a bit more paprika if needed) and simmer 5 mins
Put together salad- lettuce, olive oil, salt, cooked turkey, red onion, tomatoes, avocado and your fav taco sauce
* Freeze portions (if you make double amount) and reheat in saucepan with a splash of water on medium low heat, close lid
QUINOA SALAD RECIPE//
Quinoa
Red onion, chopped
Avocado, diced
1 tbsp lemon
1 tbsp olive oil
Salt
Pepper
Feta
Italian seasoning
CHICKEN SALAD RECIPE//
Chicken (heat in pan with avocado oil spray, salt & pepper)
Lettuce
Tomatoes
Avocado
Red onion
Avocado oil spray (for cooking chicken)
Salt
Pepper
Olive oil (for salad dressing with salt and pepper)
Shredded cheese
OVERNIGHT OATS RECIPE//
1/2 cup rolled oats
1/2 cup unsweetened vanilla almond milk
2-4 tbsp nonfat unsweetened Greek yogurt (or unsweetened coconut yogurt)
1 tbsp chia seeds
Mix everything together put in fridge overnight
SHAKSHUKA RECIPE//
5 eggs
2-3 garlic cloves, chopped
1/2 white onion, sliced
Chili flakes, very little
Oregano or/and all my Italian seasonings
Olive oil
2 tbsp. tomato paste
Paprika
Salt
Feta
1/2 tsp sugar, optional
*Spinach optional
Cook onion in olive oil for a couple of mins, add garlic, add chili flakes and cook 1 min
Add tomato paste, water (approx. 1/2 -1 cup or by taste), paprika, salt, sugar, oregano, cover and cook on low 10 mins. (add ingredients and water according to taste)
Add eggs and feta and cover till eggs are cooked
*Optional- add spinach when cooking the tomato paste
PIÑA COLADA PROTEIN SMOOTHIE RECIPE//
Lots of ice
1/2 frozen banana
1/4 cup pineapple juice
1/4 cup unsweet canned coconut milk
Unsweet vanilla almond milk to desired consistency
1 scoop vanilla protein powder
